Last night was Haddock Bubbly Bake Recipe (allrecipes.com) using fresh Atlantic haddock, along with homemade mashed potatoes (made with butter, chives, and Range salad dressing).

Tonight I made Chicken Burgers (A Baked Chicken Breast Half on a Hamburger Bun) with Oven Fries and a Ceasar Salad I added Cucumbers and Pita Chip Crumbs too. I am offically obsessed with Pita Chips in my Ceasar Salad.

Somewhere between 7 p.m. and 11 p.m. I created a faux Mr. Greek meal! Grilled Marc Angelo pork souvlaki in my panini press, made oven baked Greek potatoes in tomato sauce, a dish of homemade tzatziki sauce. To be served on Greek pita ( store bought ) . The guys can take this in for a Friday work meal. Oh yes and oven roasted a pan of heirloom carrots
since the oven was on for the spuds anyway.

All good dinners come to an end. Zorba ( my name for the Mr. Greek meal I created ) is all gone now. I have been so out of commission physically that
I was sure DH and DS would create something terrific for tonight. I must have been dreaming, DH asked me to order the menu items we had the last time
we ordered from a certain Chinese Take Out.
It took me 20 minutes of snooping through my emails before I found the dang place I had ordered from. It was brand new to us so I never remembered their
name or location. My surrender on getting take out is sad as I know we can make almost anything from stuff in the freezers, cupboards and fridge......but if
they won't and I'm unable....hrmph!

the whole plan for making Persian Saffron rice ( tahdig ) has been thwarted! DH has it in his head he won't like the flavour of saffron. Based on NOTHING!!
He's never had any dish made with it. Whatever...hrmph. We've sort of booked up anyway with a couple of latent birthday meals. One being delivered at
home ( DS's choice for his ) and the other is dinner for 2 at Red Lobster ( DH's gift to me ) . o.k. I'll forget about making the rice for now....ha ha
This morning I pressure cooked up a quickie beef stew! Fantastic blade steak was so tender after cooking , it was as soft as the spuds!

Have a pot of meat sauce simmering on the stove now. Will make pasta later to go with it

Leftover sauce will go in the freezer for an easy meal in the next 2 weeks
