    Last night we made Chicken Enchiladas with Homemade Enchilada Sauce, Chicken, Mushrooms, Peppers, and Cheddar. Yum!!!!!

    Tonight I made Meatball in Mushroom Gravy over Mashed Potatoes.

    My plan was to have extra Mashed Potatoes for later in the week but that did not happen. Oh well, best-laid plans.

    DH cut the chicken breast up in small pieces so I baked the chicken in the oven on parchment at 350 for 20 mins then flipped and 20 mins more. I loved the taste!! Had it with leftover rice and a caesar salad with homemade dressing https://cookieandkate.com/caesar-dre...9SrKsUbL3gIWM8

    It was a yummy dinner now it's time to make some popcorn!

    @crafter I removed all the skin from a dozen chx thighs, but left the bone in. Browned them well on both sides. I only had a jar of hot peppers in oil so I diced up about 1/4 cup.
    No fresh ginger, used the jarred minced stuff. I added about 1/8 cup pure honey as I was afraid the heat of the peppers might be too much ( turned out it wasn't! ) .
    This kind of meal is my jam. Served over basmati rice that was cooked in pineapple juice. No green onions as a garnish so I used dried chives! The cashews really goes well with this.
    My preference was to thicken the sauce a little more with a cornstarch/water slurry. I recommend this dish! thanks again for sharing.

    Great to hear it worked out for you. Wow the hot peppers would be a good add. Yeah I agree, I needed to thicken it too but great taste aside from that.

    not a healthy meal but some were bought with coupons
    we made mini sliders with PC mini beef burger patties (box of 18s $9.97 i think the box weigh 800 or 900g), mini brioche buns 12s $4.89, hellman's mayo squeeze bottle $2.97 - $2 printed coupon; ruffles chips bought with coupons ($2.88 x 3 - $2 wub 3 + 2000 PCO points).
    we bought the hellman's garlic aoli and it's really garlicky - i like it! I think it'd be great as a dipping for french fries.

    I made mini naan pizzas using the leftover PC garlic pasta sauce I had leftover, Cajun roasted Japanese purple sweet potatoes and spinach with a massive romaine salad with green onions, yellow peppers and apples for sweetness.

    I had a bag of those mini sized bell peppers that needed to be used up so made an adorable pan of stuffed peppers. The ground meat was veal ( had a small pkg. in the freezer ) , small diced up the last bit of cabbage to add to the meat mixture and mixed in a microwaved a bag of cooked basmati rice, then sauce, herbs and voila! Oven time was about 40 minutes. Turned out decent.
    Had more filling than available peppers, so par cooked the remaining cabbage leaves , layered them with the filling in a different casserole dish, more sauce and topped with grated Mozz. cheese. Gave hast dish about 40 min in the oven too.

    Bucatini bake is in the oven as I type. Mmmmmmmmmm it smells so yummy in here. Another side salad to pair with it.

    Love this kinda no fuss dinner after a long work day and a long walk in the sun after work.
