@SassyAshley just a few questions about the chips/fries you do in your Air Fryer.
Do you par boil them first? or do you wash, peel and refrigerate them in a bowl of water for a few hours, then dry well and cook them?
I ask because I've only done them a couple of times in our Air Fryer and had 2 different results. One was awesome, ( the time I had them sit in cold water in the fridge for a few hours ) the other time I just peeled and plopped them in the basket and they were not as good.
Oh yes....do you stay true to a specific type of potato? ( Russet?, Yukon Gold? or white? )

@walkonby
Normally I use Russet Potatoes (they are preferred potato), I just peel them, slice them, dry them really well with a towel after they are cut and put them in a bowl with Vegetable Oil and seasoning and cook on 375 for about 20ish minutes.
Tonight I will be using White Potatoes as that is what was on sale, we shall see if I get a different result.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

@walkonby , I made them last night using white potatoes, I found the key was stirring them often as they did try to clump together

The guys BBQ'd up a pack of frozen burgers, roasted spicy corn on the cobs and pineapple slabs. Who would have thought BBQ'd pineapple could be so scrumptious? The 2nd watermelon we had bought for last weekend never got cut up until today and what a deep red and sweet juicy melon it was! These were the ones on sale at NF for $2.89 ea.

my guys have kept things pretty simple for me by taking the BBQ'd burgers in for their work lunches 2 days in a row. There's still 3 more work meal days to consider so for Wednesday's I may just pull out a package of the frozen Olivieri filled tortellini pasta and add sauce. I watched Rachael Ray today and got inspired to make a batch of her Cheese Stuffed Eggplant Rolls.
Recipe in this link if anyone has a hankering for eggplant.

I was torn on what to make for dinner tonight, my option were:
Homemade Pizza
Lasagna
French Onion Pasta Bake
I was leaning towards Lasagna but Mom said not Lasagna so Pizza it is with a side Salad.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,
