A just for me casserole. Comes out to 6 healthy servings @ 150 calories each.
Passata on the bottom of the pan, then a layer of sliced yellow zucchini and mushrooms, arranged broken up bits of Feta cheese, small gobs of Ricotta cheese, and laying bits of sliced Swiss cheese on the veg, then a layer of extra lean ground turkey that was sauteed with lots of sliced garlic and mixed with some Classico Spicy Red Pepper Sauce. ( dried Italian seasoning, pepper and some salt )
More Passata poured over layer, then repeated. Baked at 375 for just under 1 hour. Oh my.....such flavour!

Last night was roasted garlic couscous with green onions, bbq tofu and corn salsa with diced avocado.

A small bowl of homemade roasted butternut squash soup, a "mini " 1/2 a pita using the Lavash low carb bread and filling it with grilled veg ( red pepper, zucchini and mushrooms ) and hummus.
A Ryvita crispbread spread with mashed skinless/boneless sardines, and a small diced cucumber and tomato salad. Mixed just 1 tsp of Hellman's 1/2 the fat Mayo into both the sardine mash and the cucumber salad.
Black pepper was a must!

I'm a busy bee atm, making a double batch of Chana Aloo. One half of the recipe is for us to keep here, the other half is going downtown for my sis and BIL. They love it too now! Mmmmm, potato/chickpea/spicy yummyness!

Tonight will be Spaghetti and Meatballs. Homemade Meatballs pulled from the freezer and trying a new Pasta Sauce I found on sale, it is Roasted Portobello which is what I buy in the Classico Version but this is the PC brand, hoping it is good.
This was actually supposed to be last night's dinner but I did not have it in me to cook. Due to travelling home from vacation on the red eye and not sleeping. I was thinking I had been up for 24 hours, um nope, it was 24 hours since we boarded our first flight but had been up more like 30 hours, minus a couple 30 minute naps here and there. So we ordered Panzerottis last night.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Slight change in plans for tonight's dinner, originally it was going to be BBQ Wings & Chicken Chunks but we have some leftover Homemade Tenders.
So, Mom will have wings, I will reheat the Tenders, we will both have Air Fryer Fries and I will probably make a Salad on the side.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Small pork cutlets with 3 peppers sauces,mashed patatoes and maybe a side salad
The goal is to live day by day not to much thinking hahaha !!!!

we're hosting a family BBQ on Sunday, I feel guilty eating anything until then because the menu is so large. Overkill on the protein, but there are no vegetarians coming so we're good.
The menu is:
BBQ blade steaks and mayonnaise/chili powder smeared corn on the cob done over charcoal.
Marinated skl/bnl/chx brsts, Marc Angelo mild Italian sausage and foil wrapped spuds done over the propane grill.
Braised beef short ribs done partially in pressure cooker/finished in oven.
Cold shrimp cocktail, Deviled eggs, cheese board, spicy mango salad, tomato pie
Tri colour pasta salad with cooked kidney beans.chickpeas/black beans added.
Side platter with crisp radish roses, carrot curls, baby cucumbers, giant stuffed green olives and pitted black olives.
Let the fruity drinks and wine flow as we close out this 2022 Summer!

Dinner last night and tonight was Annie's Mac and shells (left overs from box last night)
After vacation in NF and pigging out I am not very hungry the past 2 days lol.
But I am feeling like a roast beef dinner with mashed potatoes and gravy and steamed cauliflower. One night soon!
