What's For Dinner?

Tonight is going to be homemade pizza with the usual suspects.

The night I got back from vacation we ordered pizza once I realized I was feeling so off because I had been up over 30 hours, not 24 hours and I have to say it just isn't as good as homemade pizza.

Tonight is Chicken Enchiladas with Homemade Enchilada Sauce, Shredded Chicken, Orange Peppers, Mushrooms & Onions with Cheddar Cheese.

Found a pepper in the fridge that needed to be used up which inspired tonight's dinner.

Tonight is Eggroll in a Bowl, I have been craving this for over a month but every time I went looking for Napa Cabbage my store was out but last week Jackpot they had it and it was on sale.

leftover cold pasta salad, scrambled eggs. Jays game is on and I dashed upstairs to grab something....lol anything fast!

BBQ tonight! Steak, baked potato, cauliflower, mushrooms/onions and ceaser salad.

I grabbed the last 6 Beef Empanadas from the freezer, egg washed and baked them up for the guys. I stole 1 of them though....tee hee.
Will make a whole new batch of them to freeze up, thinking the large family pack of ground meat will yield me 24 or so. I had shared this last batch with Sis and BIL and our eldest DS so it's no wonder there were only 6 left in the deep freeze.

Last night we had Chicken Parm using some frozen Chicken Fingers I had bought for my Mom well I was away and she did not have and some leftover Pasta with pasta sauce on the side.

Tonight will be fried rice with veggies and shrimp. Rice is already cooked!

Tonight will be Homemade Burgers pulled from the freezer with Oven Fries and a Salad on the side

Chicken Caprese Spaghetti Squash Bowls.

You bake the Spaghetti Squash, top with Chicken, Cherry Tomatoes, Mozzarella and Parm and enjoy with a Balsamic Glaze, it is all about the Balsamic Glaze.

I must admit and I hate that...we struggle with meals plans during the past weeks altrought we have so much options..Hope to be back on track soon about that grr...

I made up 8 ( halves ) of stuffed red peppers ( my diet version with x lean gr turkey, Konjac rice, Passata, garlic, herbs, spices. ) Oh yes and CHEESE! lol.
Bits of crumbled Feta in the bottom of each pepper and sliced Swiss on top. Melty, melty goodness! These were very funny small peppers, so I counted 1 1/2 as a serving.

So for the past week I was so busy and no ambition to cooking dinner that I saw an annoucement of my chicken farm boutique they have a back to school boxe with 4 meals for 4 persons at 69$ expensive ...but I took it because the hassle free dinners seems the best options
Everything was scelled and in portions
So we had
Spaghetti pasta big container of sauce with a boxe of pasta
Chicken chili with a bag of tex mex shredded cheese and a package of naan bread..so good naan bread
Chicken meatballs with mashed patatoes
And Pastry shells with a chicken vol au vent sauce,.
Hope to be back on track for meals planning tought...

Tonight I am going to make Steak Sandwiches using Steak Strips marinated in Worcestershire Sauce and Spices with Onions and Mushroom, maybe just maybe I might cook up some peppers to add to mine (Mom is not a fan of peppers). On the side I am going to make Homemade Air Fryer Fries and a Salad
