    Masala mac and cheese with garlic naan toasted( had a couple of slices to use up) and romaine salad.🥗

    Before 6 a.m. I took a large roast pan 2/3 full of lazy cabbage from the oven. Oh the aroma! Mmmm. We still have a 3/4 tub of sour cream leftover, DH loves some plopped on the top of his bowl of it. This lazy cabbage can be for a couple of their work meals as well as snacking or a lunch meal. I really cheated too, used Dole's Coleslaw ( GT had them on for $1.97 ) as I had no actual heads of cabbage.

    I had 2 red bell peppers in my fridge for a few weeks and need to use them up. Plus I was feeling like chickpeas. So I googled some recipes and decided on this one https://www.youtube.com/watch?v=5m_wbJoPcuo&t=447
    I had to make some minor changes since the recipe used roasted red bell peppers from a jar and canned chickpeas. I had dry chickpeas that I soak overnight. Despite the changes the dish turned out very good so I'll keep this recipe.

    @Purdee I too was thinking that since I have no fresh tomatoes, I could use the small bit of drained leftover canned diced tomatoes from this morning when I made lazy cabbage.
    I would prefer the sauce thicker so probably will only add 1 cup of the water. I'm going to oven roast 2 of the 4 red peppers that I have. Roasting makes all the difference to me.

    I didn't have any tomato and didn't want to open a large can of diced tomatoes; I thought about tomato paste since I have cubes of frozen tomato pastes but I forgot and it still turned out very good.

    Thawed a long slender pork loin, sliced most of it into 1" circle chops. Shake 'n Baked those, diced up the leftover pork loin bits.
    Lightly tossed them into the Shake 'n Bake bag, then into my small deep fryer they went. Made 2 cups rice in pineapple juice.
    Spread the cooked rice out over a parchment paper covered cooking sheet. Set it above the chops in the oven. Most of the rice
    separated and dried out a bit.
    Chopped the necessary veg ( onion, celery, mushrooms, carrots, and red pepper) . Sauteed each in stages in a sesame oil coated
    wok. Added the rice, drizzled in a bit more sesame oil and some soy sauce. Let it cook through, scraping up repeatedly.
    At the end tossed in the cooked pork loin bits and diced snow peas. Mmmm, this will be another option for for a couple meals at least.

    I bought a whole chicken on sale at No Frills so tonight I am making Dutch Oven Whole Roast Chicken, it is one-pot meal, you cook the Chicken on a bed of Potatoes, Carrots, Onions and Lemon.

    @SassyAshley , our whole chicken is almost cooked! In the air fryer atm. I decided to buy a tray of wings to do up as well as the whole chicken was a smaller one ( under $6.00 ) .

    Tonight I am going to make a Sheppard's Pie with Mushroom Gravy and thinking I will make some fresh buns to go on the side. Something about Sheppard's Pie calls for warm soft buns.
