Last night I made a chicken and veggie stir fry-for a change I added a bit of peanut butter and coconut milk along with some szechuan sauce while cooking-it was yummy served with rice.

last night I allowed myself some slices of the corned beef brisket and cabbage that I made up for the family. ( They have been off work this week, so it was nice to all sit down together ) I was careful to give myself a smaller portion size, so no guilt.

..I have a pork roast thawed from yesterday, not really in the mood for it but it has to be cooked..I was going to slice it up as its lean and bread it to make schnitzel, but nah, too much work, think I might just chunk it up in a roaster with potato & other veggies, add spices and stock and let it simmer away in the oven..and I have apple sauce to go with the pork..

I had a long day so tonight’s supper was fish sticks, French fries, cucumber salad, organic carrot sticks, and fresh watermelon. Easy, but still relatively healthy and inexpensive.

everybody ate different things for dinner last night. There was leftover stew, ( DD) cream cheese taco/veggie dip and Tostito chips ( DS ) , homemade burgers (DH ) and I ate a plate of g. free crackers with hummus, and boiled up rice spaghetti and added sauce/chicken/onions to it.
We ate together but every plate was different....tee hee

I’m making a pot roast with potatoes and carrots and a broccoli salad to go with. Dh and I just took a break from spring cleaning to start dinner and have some leftover homemade broccoli cheese soup for lunch. Walls, windows, cabinets, and draperies and blinds all done. Now we tackle the decks and outside windows. I’d rather be out riding or walking, but this needs to be done.

My thoughts for tonight, anything I do not need to cook.

Sent out a large project I have been working on for Months but today was the final push to get it done so spent most of the day circling and connecting with my team to get it out to our managers. So I am done no ambition and super tired and just do not have cooking in me tonight

Nice out and it is just myself and my wife so I am going to make myself a few bbq hotdogs. I will do the normal and ask her if she would like me to make her some as well and she will just give me that look. But at least if offered
