I thinking tonight will be one of two things:
Option A - Use the leftover Shrimp from the Shrimp Ring and make a Pesto Shrimp Pasta Dish
Option B - Cook a Sausage and have it with leftover Mashed Potato Bake and a Salad
I am leaning towards Option B right now but we will see when I get home2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

We have plenty of leftovers-roast beef, veggies mash and gravy and chili.

Yesterday I baked a hoisin, pineapple glazed ham, scalloped potatoes, an egg & apple potato salad, macaroni salad and fresh dinner rolls. It was delicious. Lots of leftovers for today. Might try and make it to the cabin today, this will be our first winter trip, so very excited!! will pack up and take all the leftovers if we go....

Since I had been so sick I did not have the same verve to cook, which meant thawing some cooked stuff, or boiled it from frozen state. ( that lead to yummy sounds reminiscing over the Christmas Cracker shaped raviolis in clementine butter sauce!)
For one meal ( it's all a blur now ) there was packaged Gnocchi with Classico Marinara sauce dumped over and grilled Mild Italian Rea sausage.
Father forgive me but a few frozen pizzas made there way to our table as well.
Gosh aren't they making those smaller and smaller? For 4 of us we need to bake 3 of the Dr. Oteker ones.
I am almost 100% better now, hope to jump back into my kitchen routine again.

Thinking I might make Potato Soup tonight as we need something for lunches for the rest of the week. So I can have soup for dinner with some sort of Naan on the side either Cheesy Garlic or Pesto and something (I am currently obsessed with Pesto) and the leftovers will cover lunches for the rest of the week.

Steak fajitas and pierogies. They were awesome and I already packed some for my lunch before the kids dig in.

gosh every time I restart my no carb diet, something delicious pops up! Like at Giant Tiger today in the reduced produce rack I snagged 4 x 1.5 lb. bags of those delicious small mini red potatoes for .50 a bag!! The family will sure love those roasted up.
Then tonight I was sent this " carb " recipe from a friend! ( if the cook looks familiar that is Jenny Jones, I used to watch her tv show ( and her stand up act rocked too! ) in the 90's

I have been working very hard to limit our take out,
Friday I made Homemade Chicken Nuggets, Homemade Poutine & Cesar Salad
Saturday I made Homemade Pizza with Homemade Dough, Pepperoni, Mushrooms, Onions & Bacon with Cesar Salad
