We organized our freezer today to get a better idea of what we have and Mom found some Cooked Ribs we had frozen, she is having these and I am using my leftover BBQ chicken Chunks to make a Chicken Cesar Salad (not the biggest fan of ribs, yes, I know I am weird). As a side we making Oven Fries which we will turn into Poutine.

Boiled up 16 eggs and made up a yummy egg salad. ( found a use for those 2 last ribs of celery in the drawer ) Everyone was on their own schedule ( again ) so in zombie like fashion they each grabbed their own carb base of choice and piled on the filling.
Tbh, I slept through most of it.

Happy Easter Sunday to all!!! I have a 10lb Butterball ready to go in the oven later..making the full NL jiggs dinner with salt meat, peas pudding, etc, etc...also making a cream cheese/chocolate dessert... I made these no knead dinner rolls yesterday...they were delicious and so easy to make (there's also a video floating around FB for this recipe which is where I found it originally)

We cooked a Turkey last week to make room in the freezer and because we are both home and had the time, so we decided to pull a Prime Rib we got on sale really cheap around Christmas for Easter Dinner.
So we will have Prime Rob, Mashed Potatoes, Gravy and some sort of veggies, we are using frozen veggies right so we just reach in and what we grab is what we eat.
Also once we eat the Prime Rib the bone and some chunks of leftover meat will be turned into Beef Barley Soup.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

We are having ham supper tonight with baked beans, mashed potatoes, carmalized carrots and a Romain/cabbage salade (one of those bag ones). For dessert, i picked up 2 Milles Feuilles the other day and froze them so now they are defrosting.

Change in plans, Prime Rib was not defrosted so that will be dinner tomorrow, Mom will cook well I work.
Tonight we had a bag of Shrimp we pulled out yesterday as it was getting a bit frosty in the freezer, we added 2 different veggie blends we had in the freezer (part bags we needed to use up) and some leftover pasta from the Fridge, added some herbs and parm and we had dinner.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Since we could not make it yesterday as it was still frozen, tonight will be Prime Rib, Mashed Potatoes, Gravy and whatever veggie we pull from the freezer.

Another change in plans, Prime Rib did not get in, in time today so moved to tomorrow.
Instead we are having Homemade Meatballs in Classico Portobello Mushroom Sauce over Pasta with Cheesy Garlic Naan. Normally I would make Salad but Mom is breaking down the meat we bought at Costco so no room to chop and wash lettuce and I am out of pre washed and Chopped Romaine.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,
