Tonight is the night, we are finally having the Prime Rib with Mashed Potatoes, Gravy and some sort of veggie, my opinion is asparagus and carrots but we will see. Mom will be making dinner alone as my meeting got pushed back so I won't be surprised if we go right into dinner time (it has happened before).
2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

My family requests this dish at least 2 times in the month. So after the bread was finished baking I did up a very large baking dish of sausage/potato casserole. I showed DD the trick to it is to deep fry in batches the bite sized pieces of potato first ( that way you only need a bit of oil ) and let the sausage coins bake in the oven in a covered roast pan at 400.
When the sausage is almost cooked toss in the spuds and finish uncovered for about 30 minutes.

Cool and windy here today so I put a big pot of Beef Stew in the oven with red potatoes, onions, carrots and celery. Dumplings just went on top.
Home made apple pie and cool whip. It will be half an hr and I can't wait. It smells soooo good. It has been a while since I made Beef Stew. Everyone is happyHave a good night everyone.

I bought a *large* red cabbage because it was the least expensive fresh veggie at the store. Wow...fresh veggies are going up in price. So I made a hot cabbage salad with onions, vinegar, sugar, mustard seed and few seasoning. Served it with Polish sausage and perogies. I still have a tub of cabbage salad left, however. LOL. I am going to start looking like a cabbage by the end of the week.

I had some fresh pasta to use up so cooked it up this morning and put in a big glass casserole dish . I then fried up a white onion, some garlic, a large tomato and added a 1/4 container pasta sauce, some baby carrots, a little salsa .....actually whatever I could find in the fridge that needed to be used up. Lol. I then sprinkled the top with grated cheddar cheese and popped it in the fridge for tonight. It was so nice to grab the casserole, pop it in the oven with bread sticks and serve it with a nice tossed salad. Everyone just loved it and DH said he would like to have it again. When asked for the recipe I said it just came to me....little do they know it was a cleanin the fridge recipe. I have this recipe in the slow cooker for Sweet and Sour Chicken...I used white onion instead of red , 3 cloves garlic instead of 6 and 1/2 the sugar & more OJ..it smells good already!!! Hopefully it turns out okay...will make rice to go with it later
