Made 14 of the lovely pork loin roll ups we had at Christmas, with a few changes to these.
After pounding each strip flatter I brushed them with BBQ sauce, then added salt, diced fresh celery leaves and lemon pepper, topped that with grated Parm and Mozz, then laid the 2 asparagus tips and 2 green beans inside.
Rolled up, toothpick secured and sauteed them in butter.
We have options for sides depending on how hungry everyone will be at 9 tonight....ha ha... a LATE dinner!

We had a bag of Shrimp in our freezer that needed to be used up, it was starting to get frosty so we are having:
Garlic Lemon Shrimp, witth Stir Fry Veggies (A frozen blend we got from Costco) and Rice2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Looking forward to an afternoon on the deck, reading, etc no wind so will definitely be bbqing steak and simple sides like baked potato, Caesar salad

We made Taco Meat to put in the freezer so we just make Nachos with Homemade Taco Meat and toppings of choice

today was the BBQ...Over charcoal....steak, burgers, all beef dogs, baked spuds and corn on the cob.

^ I use propane but I think charcoal is the best! I'm tired today and its been a full weekend so far and rain for this evening. Might round up all the ends and bits in the freezer, fries, chicken fingers, chicken balls, pork bites, etc etc and cook in the actifry

T-bone steak on the BBQ with potato salad, vegie brochettes (peppers, onions, mushrooms and broccoli) marinated in Kraft Italian vinegrette and a small cesar salad.

Thinking I will keep it simple tonight, I made some Zuchinni Lasagna Rolls up on the weekend which I partially baked on the weekend. I just need to add cheese to the top and reheat. I will make some cheesy garlic naan and a cesar salad to go with it.

got a pack of chicken legs&thighs, deboned them the best I could, made chicken cacciatore to go with pasta, the skins were fried to crispy then sprinkled with salt and pepper, and the bones went into a pot for chicken broth,
