Last night, Mom made herself some Turkey Soup, I am not a fan so I made Naan Pizza with Pesto, Mozzarella, Parmesan and Balsamic Glaze.
Bacon wrapped beef tenderloin, corn, baked potatoes, salad.
Tonight I am making Ricotta and Spinach Stuffed Shells and trying a new Recipe for Focaccia Cheesy Garlic Bread.
Bonus, a whole box of shells is too much for us so I made extra filling and we have some in freezer for later. As well there are some shells left so thinking Taco Stuffed Shells will be on the menu later in the week.
Mmmm, @SassyAshley spinach and ricotta always has a yummy outcome.
I made a recipe that @Lynn49 forwarded to me. Creamy Mac'n Cheese, but I made it a seafood one. Giant shrimp ( dice up ), can of clams, drained and a few scallops.
I used Scooby Doo's for the pasta The Bechamel Sauce turned out so good! Then all that cheese melted in. Dinner and leftovers for sure.
Tonight is Baked Sausage with Roasted Sweet Potatoes, Green Beans and just because I needed to use them up some Butter Roasted Potatoes. I had boiled potatoes I needed to use, if they were not in the fridge I would have skipped the potatoes.
DH made a massive turkey soup from the 2 carcasses we placed in the freezer on Dec 26th. What is it about this soup that makes us crazy? The 3 of us had 2 bowls each.
Chicken stew. I've been craving it for the past four days.
We got a pasta machine and we're going to try making our own pasta and sauce! :)
you'll have so much fun making fresh pasta @crafter , the incredible tenderness of the pasta and its' short cooking time is worth it.
I hacked apart a Prime Rib Roast around 6:30 a.m. today, removing so much of the really visible fat chunks. A little streaking I can accept
for flavour.
Seared the smaller chunks on all sides in a cast iron pan, placing them in the roast pan ( covered ) at 350 for 25 min.
DH and DS will probably " not want much of this " because I've hidden it in the back of the fridge until they eat up their turkey soup leftovers.

@crafter, we made a couple hundred pyrohy at the kids’ home, our grandson was in charge of making the dough,,using the pasta maker was such a blessing! They’ve also made their own pasta nests and froze them.

Last night I made Baked Chicken Sandwiches, just a Chicken Breast no breading with Lettuce, Mayo and Pickles and on the side Oven Fries.
I had planned to make Homemade Wedges but I was on chat trying to heal with my internet/TV so Oven Fries were just a better option for time last night.
Tonight will be Wings for Mom and BBQ Ceasar Chicken Wraps for me with Homemade Potatoes Wedges and Savoury Roasted Green Beans.
This savoury mix I make, I am obsessed with and put on almost all our veggies if I am roasting them, oh my gosh so good. But how do you go wrong with Italian Seasoning and Parmesan?
DH surprised DS and I. he made a sauteed veggie medley with broccoli, white onion, carrots, green onion, frozen peas and bell peppers. He also grilled up garlic sausages and
baked a pan of smashed potatoes. Both DS and I had been in a deep REM sleep when we were awakened by him to " come and git it ! "
