I got an eggplant in my veggie box so I will try making moussaka for the first time. I remember when I was 15 I got my tonsils out and couldn't eat for a week. The first meal was moussaka prepared by the neighbour and it tasted pretty wonderful-mind you anything might have tasted good at that point!

Well the moussaka smelt so good it became lunch and it was very tasty. Forgot to roast the eggplant as my nephew called-but it just baked in the oven. I am visiting my nephew and his family for 2 days in California next week-enroute to Mexico. I tell you after that I am not traveling to the US while Trump is up to his antics. My nephew has 5 small children-age 3 months to 6 years so that should keep me out of trouble!
After both of us cooking this a.m. I think we are good for at least a couple of days-hubs is making pizza for dinner.

With my broken face (ok, just my nose) I did not write a meal plan last week but getting back on track this week. Although honestly, we still ate pretty well I just tried to stick to one pot/pan dinners I could dump everything in and let it cook.
Tonight will be Homemade Burgers (pulled from the freezer) with Homemade Burger Sauce and Oven Fries Poutine.
Hope is to have some Burger Sauce leftover and can make Burger Salads this week for lunch.

Super Bowl game later, nice excuse to eat!
Stuffed 8 largish white mushrooms with 2 different fillings. Lots of different cheeses were involved as I was determined to use up that last piece
of Camembert and the last of the blue cheese. Discovered 2 unopened 400 gram blocks, one of Mozzarella and the other BD extra old white cheddar.
BB dates were December 2024. Since I'm not eating those types of cheeses on my diet and not making anything that requires them I forgot they were there!
My quickie hand crank tool made quick work to grate them both up. Finally used up a frozen block of spinach for one of the fillings.
The other mixture has sausage meat in it. Also had fresh grated Parmesan in both mixtures.
All the caps are stuffed now, I pressed the filling side into buttered Panko crumbs ready for the oven later.
The guys will enjoy a homemade burger as their main entree, I'll finish up my salmon steak. Before I worked on the mushrooms I made up 13 pretty large burgers from a family sized tray of lean Beef. Lots of things added to it of course to stretch it out and add yummy-ness.

Tonight we did Homemade Chicken Fried Rice with Dumplings, Dumplings are from Costco, we love them quick and easy and feels like a take-out meal without the $$$. I also had Cucumbers in Rice Vinegar on the side.

Roast beef, mash, veg and maybe some gravy. Leaving leftovers for hubs as I am flying south tomorrow. Our group leader said there was a cold front going to hit Mexico but I looked at the forecast and it looks fine to me. Ciao!

Tonight we are making Homemade pizza with Pepperoni, Mushrooms, Onions, Bacon Cheddar and Parm.
On the side I will have a Ceasar Cucumber Salad with parm and pita chips.

Broke down and bought some of LaManna's take out lasagna. We're taking some down to my Sis and BIL tomorrow when we visit them. Been a while, we're overdue for some laughs! They've never tasted LaManna's dishes before.
