Homemade fried chicken and fries!
Soup again since I have class tonight too :(
Tinkered with a recipe, first time I am making it. Having it with noodles and boiled veggies.
Apricot Chicken Bake
1 cup apricot jam (or follow the directions below to make your own)
½ cup Russian Salad Dressing (or reduce to 1/3 cup, based on taste)
½ cup water
¾ packet onion soup mix
Garlic powder to taste
2-3lbs chicken pieces
In a medium sized bowl, place all ingredients. Adjust to taste. Pour mixture over chicken pieces in 9x13” baking dish. Cover with tinfoil and bake in 350 oven for 1 ¼ to 1 ½ hours, or until done. Serve with rice or noodles.
Apricot filling
In a medium saucepan combine 1 cup thinly sliced dried apricots and ¾ cup water. Bring to boiling; reduce heat. Simmer, covered, for 5 minutes. Meanwhile, combine ¼ cup sugar and 1 tablespoon all-purpose flour; stir into apricot mixture. Cook and stir about 1 minute more or until thickened and bubbly.

Bought a George Foreman grill from the Shopping Channel using two savings cards from Rogers before 2012 ended. FREEE! :-)
Tried it out on steak and I love it! It cooks super fast, so I had some tender and juicy but well done steak..lol
Clean up was a breeze. I made spicy sweet potato fries in the mini oven and a salad on the side. Yum~
Had smokies baked in the oven, with onions, on Italian buns. Served with tomato veggie noodle soup.

Tonight dinner is Chicken and Potatoes and that is all I am being told. I have been told do not worry it will taste good.
Kind of trying to watch what we eat as mom needs to lose weight so I am just along for the ride as she tries out new recipes. All I have to is dinner can never go wrong when potato are involved, but am kind of hoping they are mached potatoes.
did a late lunch of shrimp tempura, it came with miso soup and salad.... $9.00 including tax and tip.
Honey Garlic Sausage, four cheese alfredo in rotini, and some side veggies!
No real recipe!
Oven to 400F
Cut sweet potato into sticks
Toss to coat with a dusting of corn starch
Drizzle in some olive oil, toss to distribute
Season with spices of your choice!
--I used Cajun, granulated garlic, onion powder, sea salt and smoked paprika
Toss again, dump on to a baking pan or cookie sheet and cook until they're starting to brown around the edges.
*Make sure to not over crowd the pan! That creates steam which makes for sogginess.
*I don't bother to flip the fries half way through, but you can. :-)
Son went out for supper, so husband and me got takeout - he had dry ribs (which he only eats with bread, gah!); I had chicken breast strips, steak fries, and Caesar salad.
Milan went to a Japanese place, first time for such an experience, and he said it was awesome - where they cook in front of you. He's brave and loves to try all sorts of new things, so he had sashimi, discovered types of sushi he actually likes, loved the chicken livers appie; his main dish was scallops, shrimp and salmon - along with a whole group tasting each other's dishes, he was totally entranced by everything, especially an onion volcano (which I just watched on YT). Gah, I'm jealous.... we could never afford such a place; oh, to be single again!
who knows? i'll be NF tonight :excited:
I made a roast chicken and fries. Seems like a weird combination, but the fries were a request from the youngest son. I also served a ramen noodle salad on the side. I wait for those packaged cole slaw mixes to go on sale for $1 and use them rather than grate my own cabbage.
