    Last night I made healthy harvest speghetti with hunts sauce... kicked up a few notches with the broccoli I had to use up, onions and more garlic... all topped with grated armstrong cheese! and 50% stickered french bread from RCSS baked with garlic butter and ait of parmesean cheese. and those hot piccolini peppers on the side, lol.

    This thread is making me hungry!! I've got italian sausages, diced tomatoes, red peppers, onions and garlic cooking away in the crock pot... will probably serve it over rice or noodles. Got the recipe from this month's Woman's Day magazine and I really hope it turns out!

    I think this is the best thread to come to when you want to try something different for dinner. What is " same old, same old" to some of you, well that might be the first time I've seen that.
    I am going to make those meat pops that me@k@tie did the other night, I found the recipe and she says it was tasty so that is all the incentive I need. lol

    I am eating a spinach/bacon/tomato wrap right now, so dinner will be very late.

    Last night was spaghetti!! I ate hardly anything all day to save up my food portions for a huuuge dinner

    Satay Meatball Sticks
    Serves : 4
    Makes: 24 meat balls

    For Meatballs:

    500 g pork or beef mince
    1 tsp MAGGI Beef Stock Powder
    1 egg
    1 tbsp soy sauce
    1/4 cup dry breadcrumbs
    8 bamboo skewers
    Oil for frying meat balls

    Method

    For Meat Ball:

    Combine mince with MAGGI Beef Stock Powder and other meatball ingredients. Shape into 24 meatballs.

    Heat oil in a frying pan and cook meatballs until cooked through and golden then remove from pan. Thread meatballs onto 8 bamboo skewers, 3 balls per skewer. Set aside to keep warm.


    For Sauce:

    1 tbsp oil
    1 onion, finely chopped
    1 clove garlic, crushed
    2 tsp grated ginger
    3 tsp curry powder
    375 mL CARNATION Light & Creamy Evaporated Milk
    2 tsp corn flour
    2 tbsp peanut butter


    For the Sauce:

    Heat oil in a pan. Add onion, garlic and ginger to pan and cook 2 minutes. Stir in curry powder.

    Add combined CARNATION Light & Creamy Evaporated Milk and cornflour, and finally the peanut butter.

    Bring to the boil, stirring, then simmer 1 minute. Serve sauce with Meatball.
