i had planned on roasting a chicken for dinner last night but we had company kinda late and time slipped away so i didnt do it. roasted one this morning, lots of meat for chicken clubs..maybe make some chicken caesar tetrazini tomorrow.. made some chicken & rice soup from the bones. also made a pasta salad with red peppers, carrots, cucumbers, broccoli and celery with a sundried tomato salad dressing. for dinner tonight i made sweet and sour meatballs, mashed potatoes and corn. lots of yummies in the fridge for DH for his dinners @ work.

I made a greman cucumber salad (thinly sliced cucumbers, fresh chopped dill, sour cream, cracked pepper served with spaghetti and homemade spaghetti sauce!

Too hot to cook, so a bonus of having my son work downtown is that I gave him a call to pick up supper on his way home - honey garlic chicken tenders, crunchy DF wings, and fries. Ooops, nothing green! (Is gravy a vegetable?)

been busy with 2 birthdays, my mil and dd. i made butter pecan cake with cream cheese frosting for mil, and vanilla cake with buttercream frosting for dd, all from scratch. whew! next up is dh's birthday in july!

Those Bick's chopped dill pickles are pretty handy for egg and tuna salad, as well as potato and macaroni salad.
Tonight I made chick'n Gardein, mashed potatoes, and a gravy made of sauteed then pureed onions, red peppers, and condensed chicken stock (yep, a gravy made of veggies).

Haven't had to cook a meal since Friday when dh left for the states. He'll be back tonight, probably pretty late so I have decided to roast a chicken this afternoon. Then when he does gets home, I can make him a couple hot chicken sandwiches smothered in gravy and a salad plus, I can treat myself to a dinner. It was great not having to do any cooking but I can honestly say I miss a hearty meal.

Last night I decided to try and make salmon patties with a gourmet twist, and they were delish! I added some fresh lime to them and breaded them in panko crumbs. Then I made a creamy white sauce and drizzled it over them. The sauce really complimented the salmon patties. I have one left over for lunch today!
I have nooo idea what I am going to make for dinner tonight. Something with chicken I think!

This was the breakfast for dinner I made earlier in the week:We started with bacon on the bbqand ended up with homemade waffles and blueberries cooked down into a syrup Last night was Greek night so I made chicken souvlaki, greek salad, rice and tzatzki all made from scratch and dessert was these. I grew them myself and lastly I made these to die for blueberry muffins with a stusel top

This is the first time I baked a birthday cake from scratch, please don't mind the imperfections

As you can see, there is some improvement compared to the first cake

Very inspiring.
I'm baking chicken with potato.
Collard greens stir fried.
Chick peas and add in the gravy from the baked chicken.
I am definietly bookmarking and going through this post for some ideas!!
