Last night had chicken breast and potatoes.
For lunch I did a side salad and a ham and cheese hot pocket. Never had one of them before and they are actually kind of good tasting! Especially for .88/box since if I eat one with a side salad it makes for a very cheap and quick meal. I did it in the oven though so it got nice and crispy. I doubt I would eat them if I microwaved them. I can't stand soggy foods. Kind of regret not picking up more now during the sale! They only had the ham and I think a cheese steak kind (was looking for pizza kinds) so I only picked up one box in case I hated them.
hubby wants sausage gravy and biscuits so i'm gonna try with an easy recipe and pillsbury biscuits. My first time so i'm not going to do biscuits from scratch.
I have no idea what we are having for supper. I do have a family pack of ground beef thawing in the fridge that I am going to make into meatballs. They are going to be fried up and frozen in preparation for baby's arrival. I found an easy rhubarb sorbet recipe online that I am interested in trying, might finally get around to it today. Supposed to be 30 above for the rest of the week, so I think it is appropriate.
Last night's supper was a success but lasted into 4AM. Today I'm feeling the after-effects of 1.5 bottles of red wine at home, while the boyfriend is working lol. No appetite, or cooking for me today! There's lots of tupperware in the fridge though...gotta love leftovers!

Well, I'm still on the plane, and we don't land till 5:30. So by the time we collect our luggage and get the rental car it will be well after 6, so I'm thinking we will hit up a restaurant tonight for something tasty (I'm feeling like perhaps a veal cutlet, and yes I all brown just like the gravy :tongue:) A dd and I will hit the grocery store tonight so we can have coffee and stuff for the morning at the condo. I think we will pick up enough stuff tonight for a few days, then once we're settled we can get a menu planned for the 2 weeks and go from there.
just made some rice in chicken broth and did up some broccoli and cauliflower with melted cheese. Then threw some chow mein noodles on the side :) So good!
Made corn chowder with some of the corn I got yesterday at the market and making a big batch of hummus for toast for my lunches

Tonight was a joint project between me and DH. It started with me wanting to make a recipe out of Today's Parent magazine that I saw for falafel on foccacia buns...
...and surprisingly, DH was excited about this idea. :razz: Usually if it's a meal where no animals have been harmed in the making, he goes a bit nuts. Meat withdrawal or something like that.
Anyway, he decided to make homemade tzatziki sauce for it instead of the yogurt and mint sauce it called for and we scrapped the foccacia buns in favour of pita bread.
It was our first time ever making this. His score: 6 out of 10. My score: 10 out of 10.
The reason his score was different was because he was mixed up about the recipe. When I told him I wanted to make falafel, the picture he got in his head was shawarma. LOL. I know, I know. Hey-- but whaddya expect from a pair of country kids who grew up on meat, mashed potatoes, and veggies? We're not all that worldly out here in the sticks!
Anyway....I really loved it. But we are freezing the leftovers. DH says they taste an awful lot like my veggie burgers and he's not a huge fan of those...so it looks like I'll be eating falafel in my lunches when I go back to work in September. :tongue:
Agreed, it looks yummy, Patty. But you have me confused with your calling it chowder - which is cream or milk enriched, and I'm sure you didn't use. Usually corn chowder has bacon, too, which I am assuming is no longer in your house, either, lol!
I'm wondering from the pic what the white and yellow root veggies are? Yellow carrots, parsnips?
Looks amazing, anyway - too hot to think of cooking something like that here! Enjoy!
