It's one of THOSE days. Sometimes the day just calls for cereal for dinner.
tonight I am attempting in making home made meatballs with honey garlic sauce with rice, broccoli, and garden salad (Nephews reguest and I have never had them so wish me luck lol )
Shake n bake pork chops, scalloped potatoes and Brocolli.
My sister suggested that I start cooking with lentils. I'm trying my first recipe, which I have altered to our family needs. I'm making lentil and corn chili. We'll see what the family thinks of it.
No cooking tonight leftovers for DH and a can of soup for moi.

Here's the verdict. Our 3yr old ate his chili. I ate mine on toast and I'm glad that I put corn in it, otherwise I don't think that I would have liked it as much. Dh complained that I was trying to feed him something without meat in it. He ate a bit of it and then helped himself to some leftovers. The verdict is out as to whether or not I will make this recipe again...without adding ground meat to it first.
...didn't bbq, too windy, actually it started snowing, sideways! So I left the skin on the chicken and rubbed it with EVOO and minced garlic and sprinkled with S&P, dried rosemary , dried basil, marinated in the fridge for about an hour and then baked in the oven for about an hour!! very moist and yummy..had with it caesar salad and baguette toasted in the oven with butter & garlic.
chicken and rice soup with bok choy (have some in the fridge that needs to be used and think it will be a good addition) and chicken ceasar wraps :)
Thinking something with Chicken Thighs and Rice, maybe Stir Fry or maybe Salsa Chicken will have to see what happens when I get home.
I put chicken thighs and a pork roast in the fridge to thaw days ago, but they are still pretty frozen. :( So tonight's supper is Ukrainian garlic sausage, perogies or KD, boiled veggies, sour cream, and milk. Our 3yr old son has gymnastics tonight.
I guess I will bake the chicken thighs tomorrow with a little bbq sauce on top to finish them off. There will be leftovers for Saturday.
The pork roast will be turned into pulled pork on Sunday. I was looking at a recipe that uses a dry rub that marinates for 12-24hrs. Then you put the roast on top of a bed of sliced onion and apples. You are supposed to pour a beer over top, but we don't keep beer on hand so I might just use some broth or something. Have some home made coleslaw to go with it.

Okay, so all you chefs and gourmets and such please explain to
me why you use all those spices and sauces etc. to make something
taste like something else.
Why can't you just eat it and have it taste like what it is?

free appy ( calamari!! ) with 2 entrees. DH and I both got Chicken Parm breast on bed of Fettuccine ( his red sauce, mine white ), @Kelsey s, and earned 30x the Scene points! Brought over half of mine home for later tonight.....yikes what a portion!

I'm just a home cook, don't do anything fancy-dancy - and what spices and sauces do is just change things up. Nothing wrong with eating stuff plain, but for example adding different things can change around something like chicken pieces to be a gazillion different things, that's all.
Leftover chicken soup - then husband will have his fave (gah!) what I call leftover junk from me taking the meat off the chicken carcass for another meal - the bones, skin and whatever meatgunk I left behind, he eats it up with fresh bread.
I'll do something with some chicken breast for myself - maybe a sandwich or wrap.
Even just salt will bring out the flavour of some food items. I've grown up eating food where my mother has thought salt and pepper were the only spices needed. Now that I have a whole shelf of spices it's a different playing field.
Open faced hamburger sandwich, mixed veggies and mashed potatoes. Cherry cheesecake for dessert.

Last nigh ended up being Brushetta Chicken (used a breast instead of thighs) with Rice and roasted cauliflower
Have a feeling tonight will be pizza Mom has to make a wedding cake for tomorrow which is left until today so I do not think I will be able to get within 20 feet of the kitchen all night.

Pizza. I have to make sure I set a slice aside for breakfast tomorrow.
Lasagna & Salad.
Maybe some cookies for dessert if anyone is still hungry.
