I made dh a tossed salad and a Stouffer's lasagne. LO isn't feeling very good, so he had toast and milk. He woke up with a hoarse voice, didn't want his afternoon nap (had a short one in the truck), and has been cranky. Today has been a bad all day sickness day for me, so I just keep trying to snack on little things throughout the day.
CO-OP didn't get in any of their $1.28/lb picnic hams, otherwise I had planned on roasting one today. I have a raincheck.

Hotdogs and homemade coleslaw. Was going to whip up some ranch pasta salad but the recipe called for it to sit for a couple of hours.

Pork loin chops baked on a bed of chopped green onion, carrots, celery, garlic and peas.
The veggies and juices will go over baked rice.

the rain rolls in off the Gulf.

I guess we are out of M&C...didn't realize that. So I cooked egg noodles and we had it with kubasa. I had cheese whiz on mine and dh had alfredo sauce. Might have veggies later since everyone in our house is feeling somewhat under the weather.

made macaroni & cheese ...I like using old cheese and baking until it has a crispy crust on the bottom and top and all gooey & melty on the inside... it was yummy!

I am going to have spaghetti and meatballs tonight. I made the meatballs last night so it will be just a matter of putting it together later. :)

Tonight. No idea. Tomorrow night. Roast beef with all the fixings :) Took it out this morning to defrost.

Last night was Octoberfest Sausage with Homemade Mac N Cheese and Acorn Squash.
Tonight will be leftovers of some sorts, choices are pizza, chicken stew or a mini meat loaf that the top got ripped open in the freezer so had to cook up.

mmmm I need to make mini meat loaf. It's been on my list for awhile. I think Sunday will be a prep and cook for the freezer/week day :) Thanks for the reminder SassyAshley!

making Chicken Parmesan Pizza...(been cleaning the house all day--blah!!) took out homemade dough from the freezer earlier, fry ground chicken add tomato sauce, S&P, lots of basil, garlic, onions & mushrooms chopped small..add lots of parm. cheese, spread over the pizza crust, top with lots of mozzarella & parm. mixed together..bake at 375 deg until golden & bubbly.

Chicken stuffed with pesto, sour cream or Greek yogurt and mozzarella cheese..coated with panko crumbs a little flour and Italian seasoning, piri piri and what ever spices you like. Sear in extra virgin olive oil then cook in oven..served with rice and asparagus....

Baked chicken breasts (extra for tomorrow's supper). Also skinny Asian noodles with celery, water chestnuts, and mixed veggies. Cauliflower and broccoli have been expensive here for weeks, I'm missing having them fresh in the fridge. All served with a glass of milk. LO has the option of leftover sausage from last night.

Beef broth veggie soup; sandwiches with fresh ham garlic sausage - I had fresh chewy crusty buns, husband will have fresh bread - yay to Sobey's bakery!

Tonight I'm making sweet n sour pork stir fry. I had to go to RCSS to pick up a few more veggies and while there I found some crab legs at 30% off! Those will be used in tomorrow's supper.

Roast beef in the slow cooker with baby potatoes and veggies. Also sliced cucumber to use it up :) I may even get wild and make a box of brownies and serve with ice cream for the kids for a sweet treat after :)

Tonight will be reheated left over pizza, going to make it super crispy and a bonus quick and simple dinner on the table in under 30 minutes.

Travelling today, so it was Mary Brown's Fried Chicken with taters...it was soooo good! yummo!
