We had fried chicken breast(did a extra one for the cat,she loves them:) ) with mashed parsnips(leftovers!)zuccini in tomato sauce & potatos.I had curried chickpeas instead of potatos :coffee2:(no one else likes them but they are so good from the health food store)
Well, it was a later than usual supper, but well worth it. We had a full-out thanksgiving style meal with turkey, stuffing, mashed potatoes, gravy, glazed carrots and over roasted sweet potatoes with oregano.

No, we are not Americans but we went across the border last week and they had turkey on for 57 cents a pound, so we gobbled 'em up. Pun intended. ;) We bought 3 of the bad boys. Not sure what we were thinking because we're a family of four. LOL. Cooked a 20lb turkey today and have about 19 pounds left over. LOL

I made chili & we had that with fresh paninis - it was yummy.
DH has been bugging me to make this velveeta helper thing. I personally hate them but he begged and I felt bad so I made it but I added broccoli, roasted tomatoes and sautéed mushrooms. DH was happy and that's all that matters......and I won't have to make it for at least another 6 months!!!!!
My sauce recipe is relatively easy.
2 lbs ground meat (I usually use beef, but have used veal, chicken and pork on occasion)
2 large cans of fire roasted tomatoes
1 sm can tomato paste
1 onion - diced
1 rib celery - diced
4 gloves garlic - grated or mashed
1 carrot - diced
1 sm container mushrooms - chopped
4 tbls oregano (not mexican)
3 tbls peppercorns - crushed
3 tbls fresh rosemary - chopped (or 2 tsp dried)
4 tbls butter
1 tsp salt
2 tsp sugar
2 bay leaves
I brown all the veggies with the exceptions until the are nice and carmalized in 1 tbls butter. Put the veggies in a bowl, then in same pan, add 2 tbls butter and brown the mushrooms, add to bowl. Brown the ground meat in the same pan and adds the garlic and all the spices about 2 or 3 minutes before the meat is finished browning, then add to bowl. In same pan, add tomatoes, paste and scrap any bits from bottom of pan. After a minutes or so, add back all ingredients from bowl. Add the bay leaves and turn down to a simmer. The sauce is ready in approx 1 hour (but the longer you simmer it, the more the flavours meld together). If you require more sauce, you can double the recipe easily, just cut back the oregano to 6 tbls for a double batch.
It turned out to be a really nice day yesterday afterall, so no cabbage rolls, instead I made taccos :) of coarse they were served with all the fixins and a nice garden salad.
Because he's up at 4:30am, leaves home at 5:30am, drives 1 hr to work and works until 5:30(sometimes closer to 6pm) and then has a 1 hr drive home and doesn't walk in the door unlit 6:30 at the earliest depending on traffic so I don't make him do much of anything on days he works :)
