    Even though it was 28 degrees yesterday I made a quick-ish tofu bolognese. Enough for lunch for dh today and me too.

    DH's back is still barking so I made up his famous Beef Barley soup. He said I did o.k. tastes the way he likes it.

    Finally got brave enough to try out our new air fryer. It arrived April 27th but with my medical
    distractions it sat there. A learning curve for me, the digital control panel intimidated me.

    Used the Rotisserie Spit to cook 2 separate pork loin roasts ( they were both pretty slender pieces) .
    Chose 350 degrees for 50 min each time and they turned out decent! I think the dry herbs I coated
    them with made all the difference in the flavour.

    Not sure if it will be for dinner, but made up a crazy salad with diced tomatoes, red pepper, red onion, baby cucumbers, flat leaf parsley,
    black Kalamata olives and 3/4 can light tuna ( I must surrender 1/4 of it to my felines. They stare me down until I give them some...lol.)
    I sprinkled in dry herbs ( basil, dill, everything bagel seasoning and ground black pepper ) The dressing was a mixture of extra light EVOO,
    light balsamic vinegar, Djon mustard, and a tiny bit of white sugar. It's chilling now.....we'll see who likes it.

    Tonight I've redeemed myself!
    Made 18 mini lemon tarts.....making the lemon curd from SCRATCH! Although, I did use Tenderflake
    pastry shells, gotta cheat some way. Boiled up a whole pot of spuds to go with the Shake & Bake Pork
    loin chops DH is baking. I'll let him mash the spuds, it'll save my wrist. lol.
    I made a mango salad using 6 of the mangoes we bought from NF ( case was $6.99 ) they were perfectly sweet.
    Picked fresh mint from the front yard to go in it, added the leftover lemon juice I had squeezed to make the curd
    and sprinkled in bits of crushed chili peppers. The heat makes it.

    Dinner will be whenever he cooks those chops!

    Tonight will be burgers/burger bowl for me. Because it is easy and we have lean beef in the fridge.
    I just went out and bought fresh romaine and buns.

    OMG!!! @harbie I was wondering which gorgeous pan you had purchased.
    Nice choice. She's a beaut! The meal looks delicious!

    I was busy this morning so that dinner will be easy to get on the table. Made a potato/egg salad, a tomato/cucumber one
    and filled 3 large mushroom caps with a yummy mixture. It consisted of diced cooked shrimp and sea legs, cream cheese,
    red and green onion, minced garlic, Grated Parmesan, mayo, butter, crushed Grissol Baguettes, fresh thyme and mint leaves
    and breadcrumbs.
    I'll broil these later along with spreading the extra mixture onto the larger discs of the Baguettes. The main event will be BURGERS!
    I am " meh " about that but the guys LOVE their burgers. I sauteed up mushrooms and onion for toppings and placed slices of tomato
    on a saucer. We're all set!

    This morning I made " Marry Me Chicken " but I always add things. I wanted extra thin sliced veggies in there.
    Turned out so creamy! Mmmm. Added all thin slices of carrots, celery, green pepper, red onion and shallots, then
    chopped up the remaining fresh flat leaf parsley and mint leaves.
