But I bought those silly little taco shells so I guess I'm stuck with normal ones for now
Well I used to save all the broken pieces in one box and used those and tostitos.

When I make tacos I make so many different fillings for them I don't wanna THINK about making something else.
(Let's see: Ground beef, shredded cheese, green pepper, red pepper, tomatoes, guacamole, salsa, spanish rice, sour cream, refried beans.)

Sweet chimichangas for dessert maybe? Take flat tortillas and fill them with whatever (I like mashed banana and a bit of peanut butter, but fruit purees or even a bit of sweet cream cheese or cinnamon/sugar. Let your imagination and your leftovers dictate :3). Wet your fingers and moisten the edge of the tortilla and squish in half. Fry until golden and top with cinnamon and sugar.
(I think you're actually supposed to roll them up, but every time I try that things goosh out the sides.)
WOW, thanks for all the ideas!!!. You must be full of them

I'm going to make some spanish rice (thanks to your idea) hopefully it goes well, I'll let ya know!

Oh and that dessert sounds sooo good

    I love Mexican food.

This website has lots of authentic recipes too
I do NOT work for them, it's just a site I like

    http://www.goya.com/english/

Of course, they list their brand in the ingredients but you can substitute the equivalent

And I stress authentic, not like Taco Bell, their stuff is very adulterated, most of it's actually pretty barfy except for the Seven Layer Burrito

Speaking of broken taco shells/corn chips, I found recently you can add them to chicken vegie soup with a little taco seasoning. Makes the soup more hearty and is good with grated cheese on top.

Also very tasty on top of a salad, with a bit of sour cream, salsa and cheese. Taco salad anyone?

Went to my Dad's for meatloaf and mashed potatoes. His specialty. And cake, he is very proud of his homemade icing...its so cute.

Tomorrow I'm doing fried chicken, smashed potatoes, pan gravy, and corn on the cob. I might pull out the breadmaker too if I'm really motivated. Lol. Nothing like comfort food!

stopped by my parent's house on the way home from work and I scored...Mom just finished cooking 6 turkey legs/thighs...so we had homemade clubhouse sandwiches and froze the rest of the turkey for other dishes and soup...since my DH was at work, I was too lazy to cook after work and stopped by Subway, that's what he'll be getting when he gets home at 2a.m. from work!

Tonight I'm going to live on the edge and make either manicotti or lasagna

I have the ingredients for both; too early to tell what I'll feel like later
