What's For Dinner?

I have been away from this thread for way too long! I started a new dietary lifestyle change today. My naturopathic doctor advised me to take part in a 12 week program called First Line Therapy. Main principles are to stay away from sugars and eat low glycemic food.
Tonight we had a tofu stir-fry with Ginger Broccoli, Portabellos and Red Peppers over quinoa.

Attention trucks... ^^^ this could be for you! Sounds delicious even if it is "prescribed".

There used to be a vegetarian restaurant here in Vancouver that served all sorts of stir fries made with "tofu seafood". It was amazing because the tofu was pressed into the shape of a prawn or a scallop or a piece of crab claw meat. It was coloured and flavoured to seem like the real stuff and it was hard to tell the difference!

Anyways, we had slow roasted pork back ribs tonight and egg noodles tossed with some "homemade" pesto that I got from the farmer's market. Oh, and more of that bargain asparagus from No Frills.

I have been cooking/cleaning like a mad woman all week so I can be prepared when DH goes in for his knee surgery on Monday so I have 0 energy or intrest in food. I will probably make garlic mashed potaotes and chicken poached in apple juice. I will make a reduction of the apple juice and spices and use that for gravy. Oh, and some veg but I don't know what. Gotta go shopping

ok so tonight im making Mercimek Corba - lentle soup with a bread bowl

as well as a layerd borek with ground lamb
