    OMG! I had forgotten about my Mom's apple pie recipe...I had always just assumed she made it the 'regular' way...you know..toss the apples with sugar/cinnamon...but rifling thru recipes in my books this morning for next month over a pot 'o coffee, I found it!
    Why on earth did I every forget about it in the first place? I guess with kids growing up and everything that goes with them over the years...teenage years (yikes!)...new jobs, a wedding...things get lost.
    But now that I've found it....I know I'll be making a few and freezing them for the holidays!!
    Strange how we lose our baking history sometimes, eh?

    Stella's Apple Pie Filling

    1/2C unsalted butter
    2T all purpose flour
    1T cornstarch
    1/4C water, less 1T
    1T vanilla
    1tsp cinnamon
    1/2C white sugar
    1/2C brown sugar
    8 McIntosh apples, peeled, cored, sliced

    Melt butter in saucepan and stir in flour and cornstarch to form a roux.
    Add water, vanilla and sugars and bring to a boil.
    Reduce the temp to medium and add in all in the apples.
    Simmer for a couple of minutes.
    Keep warm.

    Use your favourite pastry, mound apples into bottom crust,
    place top crust on, and brush with a few tsp of the syrup.
    Place on lower rack in the oven *not the lowest.

    Bake 35-45 minutes or until apples are soft.

    NOW I remember why her pies were better than anyone elses! :-D

    Ooo, I love mincemeat pies, too! Although they're so rich, I can only eat a little bit.
    Like...only one big slice! With vanilla ice cream!

    Yes...and when it's cooked like that, the apples are
    still fairly crisp, but they're in an almost caramally syrup!
