Went to Casey's with BF
we started with lobster and crab dip with warm trotilla and naan bread. I had teh Cashew chicken stir fry and BF had the surf and turf burger Mmmm yum!

Tonight is Lemon Roast Chicken, Roasted Garlic Potatoes, Green Beans and a salad.

We had home-made chicken/veggie soup...which was wonderful.
HOWEVER! If I EVER tell anyone that I'm making rum-balls again...or if I'm dipping anything into melted chocolate, would you please slap me up-side my head??!!!
Ugh. Now I remember why I don't make them often. And why my DH took pity on me and made me my favourite home-made soup. Actually...it was the best he's made so far!!
Now. Just please remember what I said about the rum-balls/dipping thing.

I'm always tempted to put on a bib before I read this thread.
So much good food!
Today we had a big rich brunch so we kept it simple and light tonight for dindin. I have this recipe for Avgolemono soup that I've been making for about 20 years and it's a deeply satisfying and simple comfort food. Especially nice after a sunny and fresh day out and about.
You'll probably find Avgolemono soup on some Greek menus. Mine is simply rice, broth, lemon juice (fresh!), eggs, S&P, and I put in just a pinch of chili garlic sauce. Can be had with our without chicken. Tonight I chopped some leftover chicken pieces and threw them in. One very important ingredient for this recipe is elbow grease!
So, a big hearty bowl of soup and some bread and we're happy!
