Well, does it ever make a difference to have another pair of hands help with baking!
My husband helped me make a dozen bran/date/nut muffins; dozens of cake mix chewies - devil's food mix, with Reese's peanut butter chips and walnuts; and a sheet pan of squares that taste like chocolate chip cookies, with mini dark chocolate chips.

I've been making biscuits lately. I made a master mix, and just scoop some out and add milk, knead lightly, shape and bake. Sometimes I add cheese or herbs for flavour variations.

2 single cupcakes from a GF chocolate cake bag mix, had to actually measure out 47 grams of the mix. Cannot trust myself to have more around right now. lol

Technically not baking, but I made puffed wheat squares last week.

I received my new KitchenAid mixer yesterday, and had to decide what to try to make. So tonight I'm making rolls! I'm hoping they come out OK, they're in the oven now. Fingers, toes and eyes are crossed! Rolls are really not my strong point.
Updating to say, they're not the most fabulous rolls ever, but probably the second I've ever made and they're pretty good. I used this recipe.

The Americans are coming! The Americans are coming!
Every year around this time, about 100 Americans from a Legion in New York and Vermont come over to commemorate the two wars between Canada and US. One was the war of 1812 and the other i think was some time in the 1700`s. Our Royal Canadian Legion is hosting them as they do every year. All the cérémonies take place at Fort Chambly. So the ladies of the Legion are putting on a real nice spread. Im making 3 desserts: Chocolate Fudge Brownies; Red Currant Cake with Vanilla Cream Icing; and Rhubarb Cake with Strawberries.

Master Baking Mix Recipe
Sift together:
10 c. flour
6 T. baking powder
1 1/2 T.salt
1 1/2 t. cream of tartar
1/4 c. sugar
Cut in to consistency of cornmeal:
2 c. vegetable shortening.
Store in a covered container at room temp.
Biscuits
Preheat oven to 450 degrees. Combine:
1 1/2 Master Mix
1/3 c. milk
Add milk all at once, stirring 25 strokes. Knead lightly on floured board. Roll 1/2 thick. Cut, and place on ungreased baking sheet. Bake 8 minutes.
