I might need to stop visiting this thread because every a time I see some thing sweet post and looks yummy I want to try it and I am really trying to cut back on sweets.

ha ha ! @flemeth That's precisely how I ended up with 3 ingredient fruit cake and Pompochkey cookies in my freezer.
So good though!!

Well my Mars Bars recipe doesnt look anywhere professional as that picture. They are a big mess but ohhhhhhh so good. They freeze very well also.

I made a lemon pie yesterday (not from scratch) and also i baked Sugar & Spice Crackle cookies. Recipe and picture will follow.

Roasted eggplant (in slices). I don't make it often so I forget how much work it is (imo) and I tell myself it's not worth it. But then when i eat it... mmmm. But roasted veggies shrink down so much it's frustrating. I make 2 full sheets at a time and they shrink down to what I consider just a couple of servings. I love roasted veggies

I usually buy most of my "Christmas" cookies..hee hee... but this year decided to make all my own..so far I've made butter tarts and made these guys Thursday night to add to the freezer. They are sinfully delicious!! (only 1/2 left!
) I used milk chocolate for the top (and if I were to make them again I would probably add a little more graham cracker crust ie 2 cups instead of 1-1/2)
Fantasio Bars With Graham Cracker Crust
“Chocolatey coconut cookie bars with a graham cracker crust, great for people with a sweet tooth.”
Ingredients:
1/2 cup butter
1/4 cup white sugar
1 1/2 cups graham cracker crumbs
1 1/2 cups flaked coconut
1 (14 ounce) can sweetened condensed milk
1 cup semisweet chocolate chips
1/2 cup almonds, chopped
Directions:
Preheat an oven to 350 degrees F (175 degrees C).
Melt the butter in a saucepan; remove from heat and stir in the sugar and graham cracker crumbs. Spread the mixture into the bottom of a 9×13-inch baking dish. Bake in the preheated oven until slightly firm, about 10 minutes.
Stir the coconut and condensed milk together in a bowl; spread over the baked crust and return to oven for 12 minutes more. Set aside to cool at least 10 minutes.
Melt the chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Stir the almonds into the melted chocolate; spread evenly over the cooled coconut layer. Allow to cool until the chocolate sets.

Ok, here is the recipe for the Sugar & Spice Crackle Cookies. I started making these last Christmas. I love their light gingerbread taste. I need to get my act together and post pictures of the Mars Bars recipe and this recipe.
SUGAR & SPICE CRACKLE COOKIES
3/4 cup shortening (i use Crisco)
1 cup brown sugar
1 egg
1/4 cup molasses
2 14 cups flour
1 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp allspice
1/4 tsp black pepper
1 tsp ginger
1 tsp nutmet
granulated sugar
In large bowl with electric mixer, cream shortening and brown sugar until fluffy; beat in egg and molasses.
In separate bowl, mix together flour, baking soda and spices. Beat about half of flour mixture into creamed mixture using medium speed on electric mixer; stir in remainder.
Shape dough into 1 inch balls; roll in sugar. Place 2 inches apart on ungreased baking sheet. Bake in 375F oven for 8-10 minutes or until tops are cracked. Cool. Makes about 55 cookies.

Used up half a package of frozen phyllo that's approaching its best by date by making rolls with honey ham, goat cheese and spinach. They were good, but I can't remember why I bought it in the first place since it's so much more finicky to use than puff pastry. I suspect I had something in mind that requires phyllo, but no idea what it might have been.
Note to self... don't buy phyllo again without writing down what it's for. ;p
