I used up the second half of my package of phyllo dough by making more rolls. Taco meat and cheddar cheese ones for dinner plus a few nutella ones with the last couple of sheets.

My Coffee Cake recipe comes from this elderly woman that i met about 30 years ago at a Tupperware presentation. Been using it ever since. I make it in a Bundt Pan but you can also make it in a 9 x 13 inch pan.
COFFEE CAKE (from Gladys Stones)
1/4 cup butter or margarine
1 cup white sugar
2 eggs
1 1/2 cups flour
1 1/2 tsps baking powder
1 cup sour cream
1 tsp baking soda
TOPPING:
1/2 Cup brown suga
1 tsp cinnamon
chopped walnuts (optional)
Grease bake pan.
Mix all ingredients together. Put half of the mixture in cake tin. Sprinkle half of the toppingin the bottom of the cake pan. Put remainder of the batter in the cake pan. Sprinkle remainder of topping mix. Bake at 350F for 45 minutes

This morning I made sure I had all the ingredients on hand. Check and check! Mmm, I've never toasted my pecans before, so this will be extra yummy!.

Date Squares
DATE SQUARES
Filling:
1 lb dates (1 box of Jaffa dates), put in pan
1 cup boiling water, pour over dates and let stand several minutes. Mash like potatoes. When slightly cooled, add 1 tsp cornstarch.
Topping:
2 cups Quaker quicking cooking oats
1 cup flour
1/2 tsp baking powder
1 cup brown sugar
3/4 Crisco, melted
Mix we3ll and separate into 2 halves. Spread 1/2 on greaded 9 x 13 inch cake pan. (I usually sprinkle a bit of water to keep the topping from crumbling too much). Fill with date mixture. Cover date mixture with second half and sprinkle with water. Bake 50 minutes at 350F or until golden.

So i havent baked this yet, but tomorrow morning we are starting our annual Tortiere baking. I have 3 lbs of minced beef, 3 lbs of minced pork and 3 lbs of minced veal, 5 lbs or potatoes and a pile of onions (approx. 5-8 depending on the size). Im not making my own dough, that would be too much; im using Francois Hebert pie dough. All you have to do is slice and roll. Will take some pictures when im finished.

After many frustrating searches to buy a couple of boxes of Schneider's frozen Sausage rolls I gave up.
Bought some pre-made Puff pastry and 2 pkgs. Johnsonville breakfast sausages and made my own.
Cut them into an adorable 1" long size ( perfect for eating many! ) set them on a sheet to freeze, then bagged them up.
I've never made these before so a handy Google search gave me the heads up to remove the sausage casings and don't brush the egg wash over them until you're ready to bake them.
I baked up a few for us to sample and everyone gave them the thumbs up!! So simple, I will probably not bother with store bought anymore.
