Yesterday I made a batch of Pecan Pie Bark, it is Graham Crackers with a Pecan Pie topping oh so good.
Only thing is I think my pan was too small (the recipe just says a cookie sheet and everyone was commenting their pan was too big and they did not have enougn topping so I used a smaller pan) because there it A LOT of topping, next time I will use a slightly larger pan.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Had some blueberries to use up so I made a Crustless Blueberry Pie.
Still have blueberries left so might have to do some more baking tomorrow.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

o.k. so I know Rice Krispie treats are NOT baked BUT....from the amount of fun and sticky excitement I experienced while making my own homemade
marshmallow " goo " is worth bragging over. I've never done this before and it was all because of the tariffs and the whole buy Canadian ( if you can )
products. No Canadian brands of marshmallows to be got, so I went the homemade route.
I did use up 2 full family size boxes of Rice Krispies. ( the search for an alternate Canadian brand that would give me the same crispy crunch was too risky
to gamble on ). The remaining ingredients were all Canadian. 1 full bottle (2 cups or 500 ml ) of Crown clear corn syrup, 3 cups of ( Redpath ) white sugar,
2 x ( 7 gram ) packages of Dr. Oetker unflavoured gelatin, 1/2 tsp salt and 3 tsp vanilla bean paste. ( 2 cups water also )
Getting the liquid to reach 240 degrees on the candy thermometer was so slow, but I persevered! My stand mixer was turning with the whisk attachment and
accepted the hot liquid. Within 7 minutes the gelatin/water mixture and the hot liquid whirled away and turned into marshmallow goo before my eyes!
I know...I should really get out more....ha ha
The final yield of that mixture with the cereal that I spread out and pressed down into the 3 large casserole pans was crazy! I suspect DH won't be taking ALL
of these homemade squares in for his buddies at work.
Not sure I'd want to make these that often because I'd eat them too. Pure sugar! ha ha

a dozen homemade carrot muffins. ( with walnuts, raisins. Coconut oil, honey and plain Greek yogurt in there too. ) So moist!

I made pancakes in our cuisinart waffle pancake maker. They turned out pretty well
