I baked up a batch of " fake ", well..... my version of Spanakopita. Was trying to use up a package of phyllo pastry that has been in the freezer since ??
I unrolled it after thawing and one entire width end was all gummy, fused together so I sliced it off to be able to work with the shortened length of the
useable sheets.
The filling was fine diced everything, including Chicken souvlaki (sticks removed ), feta cheese, red pepper, mushrooms, broccoli and onion.
Lots of melted butter which goes with the prep of these. Managed to yield 23 of them.
They're ALL gone
and I only made them last night.
Full confession, I was the taste tester and ate one hot right out of the oven at 5 p.m. Then DH and I snacked on 2 apiece just prior to go visit my sis.
We brought her 2 as well. Back in 3 hours, a late night nosh saw us reheat 2 more each with a slice of pizza.
Thismorning I gasped! Empty plate on the counter, but... DS entered the kitchen gushing over how good they were.
23 - 11 = 12... DS scarfed back a dozen as DH and I had slept....bwahaha!! Good on him because having food wasted and tossed out would be way worse.
Also HE is one person I do love cooking up new sh*t for as his palette is wide ranging and he'll try any dish I make.Last edited by walkonby; Mon, Sep 9th, 2024 at 11:01 AM.

Trying to avoid carbs so I made some Cloud Bread yesterday. 6 egg whites whipped with 1/2 tsp cream of tartar, fold in 6 yolks that has been blended very well with a block of cream cheese. Portion out onto Silpat mat and bake. The first batch were so funny, small , medium and large circles but i got better as I went along.
Cloud bread is still not anywhere near " bread " to me but it does have an interesting taste, especially if you add herbs and spices to the batter before baking.

Last thing I baked was a 2 lb whole wheat loaf of bread in a pullman pan

@crafter I had to Google wtf is a pullman pan....ha ha Now I know. Will I buy one? I might....lol. Don't need it but .....I'm just curious.
Of course I'm doing the no carb thing atm so I won't buy one " just " yet.

lol yeah that would be a lot of cloud bread in a 2 lb loaf. The pans are pricey so something good for a Black Friday sale but fun to bake. Hubby loves having square bread and it's much easier to slice. I had a pineapple to cut up and normally I would let it sit in the fridge for a week and then turn whatever was left into a cake.
Not this time, this time I decided to take 1/4 of pineapple and turn it into a Pineapple Upside Down Cake. I did cheat and use a box cake mix but hey we all need a cheat sometimes.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Slowly I've been trying to use up the many many dried beans and lentils I have in my storage drawer. Other than an occasional batch of chili for the guys and/or a cold bean salad ( which I love more than they do ) often they just sit there. I learned that I could freeze the cooked beans, so now when the mood strikes me to make something I'm not stalled by the overnight soak.
Today though, I did a quick soak and cooked chickpeas ( all in the time was 1 hr. 10 minutes ), drained and towel dried them, sprayed with EVOO and sprinkled a blend of dry spices all over them. ( cayenne, garlic and onion powder, 21 Seasoning Salute, Hungarian paprika and a tiny bit of salt ). Into the Air fryer, a few tosses every 10 minutes to have them turn crunchy evenly. I'll be enjoying these as a snack once I'm done with this sardine fast on Friday.

This morning I just finished a batch of chocolate chip cookies and s’mores cookies for a memorial service later this afternoon. Both are plant based and soooooooooo chewy and yummy. I also purchased a cinnamon swirl cake because I wasn’t going to have enough time to make a loaf of my own. That one isn’t plant based so I’m curious to see which gets eaten first

@crafter you don’t really need to peel the chickpeas . Never tried it in the Air fryer

Today my DH has started his Xmas baking-so far we have his version of date squares and baklava cookies. We are having a small cookie exchange at work and will save some for here and small gifts for visitors.

awww darn it @crafter I JUT saw your post about the roasted chickpeas. Nope I never peeled them before going in the air fryer.
Funny story though, way back when DH was so negative about eating chickpeas in their natural form, he also despised hummus!
So the nasty in me wanted to encourage him to see the benefit of these healthy, versatile and economic food.
I made meatballs, BUT mashed up a whack of the chickpeas into the meat mixture. He loves homemade burgers, and yummied
his way through one, very happy.
Sadly before he got to the last bite he saw a chick pea skin! He knew right away what it was andtried to insist he hated them.
He eats them willingly now in all kinds of recipes. ( Chana Aloo is one of his fav's )

Hubs just made some biscotti-he put lemon and orange peel in and it was pretty tasty. Happy eating, visiting and relaxing to all.

hand-made bread: an oval with 20% whole wheat flour, 5% each of quinoa and flax meal, and 70% hydration. This is one of our take-alongs later today; again this year, we have been invited by my wife's cousin to take part in the traditional 12-course meatless, dairy-free Ukrainian Xmas eve feast.
