Lemon, Blueberry, Flax Muffins. I had some lemons and blueberries that needed to get used up ASAP. They turned out really good. I had intended on freezing them for dds school lunches but they are too chock full o' blueberry. She'd stain all her clothing.

I have a double batch of my "healthy cake" in the oven right now. It's got banana, double carrot (purple & orange), and yellow zucchini, pecans, chocolate chips, spices... low sugar, and no oil.
