I know Christmas has come and gone, but I made this for the first time this year and was pleased so here's to some seasonal sharing.
Cook Time: 1 hour
Ingredients:
- juice and grated peel of 1 orange
- boiling water
- 2 tablespoons butter
- 1 cup sugar
- 1 egg
- 1 cup chopped fresh cranberries
- 1/2 cup chopped pecans
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
Put orange juice in a 1-cup measure. Add enough boiling water to orange juice to make 3/4 cup. Add grated orange peel and butter; stir until butter is melted. Set aside.
In a mixing bowl, beat sugar and egg together; add orange mixture and stir until well blended. Add cranberries and nuts. Sift together flour, salt, baking soda and baking powder. Stir into egg and orange mixture. Pour batter into a greased 9x5x3-inch loaf pan. Bake at 325° for about 1 hour, or until a toothpick inserted in center of loaf comes out clean. Cool on a rack and store overnight before serving.
Orange Glaze
Ingredients
- 1 cup confectioners' sugar
- 1/4 teaspoon finely grated orange zest
- 1 tablespoon freshly squeezed orange juice, or as needed
Directions
- Whisk sugar with orange zest and orange juice in a small bowl until smooth.
- Using a tablespoon, drizzle the glaze side to side over the cooled loaf once the loaf has cooled down.
- Let the glaze harden before storing.

Here is a recipe that was a hit this year. Got it from a coworker
Chocolate Bark
2 cups of chocolate (used Melten Discs from the Bulk Barn)
3/4 cup of Almonds (buy these at Costco best deal found) lightly toasted
1 Tbsp of Shortening
In a double boiler (or what I did as I don't have a double boiler a pot full of water with a clear pyrex glass bowl on the top of it) melt the shortening. Once that is melted add the chocolate and mix until melted and then add almonds that you warmed in the oven in a baking dish at 250-300F for about 10 minute watch to make sure they don't turn black. Make sure that is fully mixed and then pour into a 9x13 glass cassorole dish lined with buttered wax paper and put in fridge until hard approx 30 minutes. Put on cutting board cover the top with wax paper and break into whatever sized pieces you desire I used a wooden spoon and put the handle under the chocolate bark. Way better then boxed chocolates. I made it this year with white, dark and milk chocolate.

I've added the simple orange glaze that I used on the Cranberry Orange Bread. Optional, but was yummy and made it look more festive.

Each year I make my Mom's "Coconut Strawberries"...they look so pretty on a cookie tray..they're so different.
And the recipe couldn't be easier!
Coconut Strawberries
1 can Eagle Brand condensed milk
1 200gm pkg flaked coconut
2 pkg strawberry jello
Into a bowl place the milk, mix in the coconut, then 1 pkg of jello (strawberry is nice, but so is raspberry, or put one into the mixture and use the other one as the dip).
Mix thoroughly and place in fridge for several hours.
Shape into strawberry shapes, dip into the other pkg of jello powder and place on cookie sheets. Then decorate with green icing leaves...gorgeous!
Warning: they're very addictive!

So glad this thread has been bumped up again

I'm actually getting organized to start my baking for this year. I have 3 baskets to make as gifts and a tray to make up for work... along with some for us to enjoy
If anyone wants some inspiration, here's what my end result for gifts was last year


They were an absolute HIT as gifts last year
In fact, my brother's fiancee just asked me a few weeks ago if I was going to make them again this year because they loved it so much!

I saw this set of pans in a Chateline article, and they look great for gifts!(by gifts I mean, filled with baked goods
) Thought I'd pass this on to people who are doing some seasonal baking. They are found at RCSS and here's what the article says about them:

My go-to holiday recipe is ridiculously simple, and decadently indulgent

Basic Chocolate Truffles
8oz good dark chocolate, chopped into smallish bits
1 cup 35% whipping cream
Heat cream until just before it boils, then pour over chocolate. Let sit for a few seconds and stir to blend evenly. Refrigerate until firm. Scoop small balls by teaspoon or using a melon baller, roll in cocoa powder (or whatever you want).
Easy-peasy! Most of the time I'll swap out the cream for a cup of Irish Cream...makes everyone a little jollier!
