I am allergic to wheat and gluten, not celiac. There is a big difference between an allergy and celiac. As holly said, with celiac the villi in the intestines are damaged and do not absorb nutrients properly. An allergy, like I have, causes the body to produce antibodies, a war inside the body. I have had biopsies and am definitely not celiac. My bloodwork however has huge amounts of antibodies..not good.
Abby, you should be far more concerned about the allergy. You are harming your body knowingly!
You need to do some soul searching to figure out why.

Abby, please don't take my posts the wrong way, but there is a difference between being allergic to something or just having something irritate you when you eat it, such as you say happens when you eat gluten. Also, there is a huge difference between having an allergy to something, and going into anaphylactic shock when you have eaten something. If you are so severely allergic to these foods, please help me understand why you would even consider eating them. Forgetting your lunch or snack at home is not an excuse. There are many, many great foods out there you could snack on and/or purchase at any corner store to eat that are healthy for you. I just don't get it? I could see a small child doing something like this, but honestly, at your age , what gives? Do you have some hidden agenda, that perhaps you don't even realize yourself? If your overweight, have severe enough allergies that you need to carry more than one epi pen with you as you state, why oh why do you eat and cook for yourself, all these foods? It's not strange to me that people eat gluten, almost 95% of humans eat it. Heck, I wish sometimes that I could just have that tiny crumb from my dh's chocolate cake, BUT, Ii have educated myself to what happens when I do. It's what's happening on the inside of your body that concerns me. May I suggest that you take the time read some really good articles about what happens to your body when you stuff foods that you have an allergy to, are anaphylactic to, or have an intolerance to. I'm not sure if you fully understand the consequences. In fact I'm positive you don't. Please, like I said, don't take my posts the wrong way, I'm just very, very concerned about what you are doing, that's why I'm not sure if everything is 100% truthful. A person that is educated about food allergies just wouldn't do that.
