well that sucks Vee.. SIL/BIL sent us a xmas card.. unsigned.. ??? hubby says we should sign it and send it back..LOL

Quick Marshmallows
1 1/2 cups water
3 Envelopes unflavored gelatin
2 1/4 cups granulated sugar
1 tsp vanilla
coconut or icing sugar (coconut may be toasted or coloured if desired)
1) Pour water in medium saucepan, sprinkle gelatin over top and let stand 1 minute
2) Add sugar and vanilla. Hit and stir on medium heat until dissolved. Remove from heat.
3) Let cool until you can hold your hand on side of saucepan.
4) Beat on high until stiff peaks form, 15-20 minutes approximately.
5) Sift icing sugar or sprinkle coconut on bottom of a 9 x 13 pan.
6) Turn marshmallow mixture into pan.
7) Top with more icing sugar or coconut
8) Put in fridge to set.
Once it's set, you use a sharp knife to cut into cubes, then roll the cubes in icing sugar so they aren't sticky. Store in airtight container. I think I got 88 marshmallows? Maybe 99, I can't remember.

I love marshmallows, but everytime I see the sugar contant, it reminds me of scraping a few of my grandchildren off the ceiling after a night around the campfire....they just kept saying they weren't tired and didn't want to go to bed :shrug:
I ate a whole bag as a snack..umm was that wrong. ;)
