    Homemade Bread Rolls


    Ingredients

    • 1 pkg dry yeast
    • 1 tsp sugar
    • 1/2 cup warm water
    • 2/3 cup sugar
    • 3 tbsp shortening
    • 3 eggs
    • 5 to 6 cups flour
    • 3 pinches of salt

    Instructions
    Mix yeast, sugar, and warm water. Set aside in warm place to rise. It will bubble and rise up. While waiting for yeast mixture, cream 2/3 cup sugar with 3 heaping tablespoons shortening. Beat in eggs, one at a time.
    Sift 5 to 6 cups flour and 3 large pinches of salt. Add yeast mixture to creamed mixture, plus 1-1/2 cups warm water. Add flour until dough is right texture for bread. Turn into large greased bowl or pan, and let rise to top (will probably take about 2-4 hours or longer). Keep covered.
    Once dough has risen, turn out onto floured surface. Coat generously with flour by turning and shaping. No kneading is necessary. To make loaves, just divide and shape into loaves. To make rolls, roll out to desired thickness. Then cut with a cup or glass. Place in greased pans, and let rise (will probably take about 2-3 hours).
    Once rolls have risen well, bake for approximately 15 to 20 minutes at 425° or 450°. It might not take quite that long, so be watchful that they don't brown too quickly; may need to cover with foil, so rolls can bake through.

    Crispy Oven Fries

    INGREDIENTS

    3-4 medium Yukon gold potatoes (~1.5 lbs)
    2 tablespoons olive oil
    1 teaspoon hot smoked paprika (optional)
    pinch of salt

    DIRECTIONS

    Preheat the oven to 450°F.
    Cut the potatoes in 1/4″ thick sticks.
    In a large bowl, gently mix the potatoes with the oil and paprika.
    Lay on a parchment paper, making sure to spread potatoes evenly.
    Bake for 40-45 minutes, turning them around twice. Keep an eye on them.
    Season with salt and enjoy!

    • 2 cups gluten-free rolled oats
    • 1/3 cup brown sugar
    • 1 teaspoon baking powder
    • 1 teaspoon cinnamon
    • 1/2 teaspoon salt
    • 1 cup walnut pieces
    • 1 cup raspberries (or your favourite berry)
    • 1/2 cup milk chocolate chips
    • 2 cups milk
    • 1 large egg
    • 3 tablespoons butter, melted
    • 1 tablespoon vanilla extract
    • 1 ripe banana, peeled, 1/2-inch slices

    Preheat oven to 375°F and generously spray the inside of a 10-1/2 by 7 inch baking dish with cooking spray and place on a baking sheet. In a large bowl, mix together the oats, sugar, baking powder, cinnamon, salt, half the walnuts, half the strawberries and half the chocolate (save the other half of strawberries, walnuts and chocolate for the top of the oatmeal). In another large bowl, whisk together the milk, egg, butter and vanilla extract. Add the oat mixture to prepared baking dish. Arrange the remaining strawberries, walnuts and chocolate on top. Add the banana slices to the top then pour the milk mixture over everything. Gently shake the baking dish to help the milk mixture go throughout the oats. Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set. For an extra tasty top, sprinkle a tablespoon or so of extra brown sugar.

    Serves:
    4 people with large servings
    Time to prepare:
    Roughly 45 minutes, including baking time
    Ingredients:

    • 1 brown onion, chopped
    • 3 garlic cloves, finely minced
    • Drizzle of olive oil for frying
    • 3 eggs
    • ¾ tsp salt
    • 1/2 tsp nutmeg
    • 1 cup milk
    • ½ cup self-raising flour
    • 4 large silverbeet leaves, finely diced
    • Roughly 75 grams feta cheese

    Preheat oven to 220 Celsius and oil a metal pie or quiche pan.
    Heat the olive oil in a large fry pan or wok and add the chopped onion and garlic. Fry until the onion starts to soften and then add the silverbeet. Cook until silverbeet is soft and wilted, then let the mixture cool for 5-10 minutes (this step could be done earlier in the day if you prefer).
    Wilt the silverbeet with the garlic and onion
    Whisk the eggs together in a large bowl with the milk, salt, and nutmeg. Add the flour and mix until just combined – a fork actually works a bit better than a whisk for mixing in the flour. Be very careful not to over-mix the egg and flour as this could prevent it from separating and creating the crust when it bakes. Add the onion/garlic/silverbeet mixture and the feta cheese and lightly mix until combined.
    Stir the egg mixture into the flour until just mixed
    Pour the whole mixture in the prepared pan and bake in the oven for 25-30 minutes until the top is browned and firm and the middle of the quiche is set. The can be served in the pan or, if you prefer, you can remove from the pan by inverting onto a plate. If you choose to serve this out of the pan though be sure to let the quiche set for about 5-10 minutes after coming out of the oven to help ensure a nice firm quiche.
    This is great served with a light side salad.

    INGREDIENTS

    Basic Pizza:
    ½ cup warm water
    1 envelope (2 ¼ tsp.) instant yeast
    1 ¼ cups water, at room temperature
    2 tbsp. extra-virgin olive oil
    4 cups (22 oz.) bread flour, plus more for dusting
    1 ½ tsp. salt

    For pizza:
    olive oil
    tomato sauce
    mozzarella cheese
    desired toppings

    DIRECTIONS

    Combine warm water and yeast in a 2 cup measuring cup. In the bowl of a stand mixer, combine 2 cups of bread flour and 1 1/2 teaspoons salt.

    Add 1 1/4 cups water to yeast/water mixture, and add to the flour mixture along with the olive oil. Beat on medium speed for 3 minutes, and then stir in a much of the remaining flour as you can.
    Turn dough out onto floured surface and knead for several minutes. Place dough back in bowl, cover with a wet tea towel, and let rise until doubled, about 1-1 1/2 hours.

    Place pizza stone in oven and heat at 500° for at least 30 minutes.

    Punch dough down and divide in half. Shape each half into a neat ball, and let rest on the counter for 5 minutes. Roll each half into a pizza round and place on parchment paper. Brush edges of crust with olive oil. Spread tomato sauce over dough, sprinkle with cheese, and add toppings.

    Slide pizza peel under Reynolds Parchment Paper and transfer pizza to preheated stone, using a flicking motion. Bake for 8-12 minutes or until crust and cheese are browned.

    Immune enhancing Asian soup
    Ingredients:

    • 8 cups (2 L) no salt added chicken broth
    • 1-6 inch (15 cm) sliced lengthwise lemon grass
    • ¼ tsp (1 mL) hot peppers, minced or dried red pepper flakes, more if desired
    • 4 baby bok choy, chopped into 1-inch (2.5 cm) chunks
    • 1 tbsp (15 mL) lower sodium soy sauce
    • 2 tbsp (30 mL) fish sauce
    • 1 -454 g bag raw peeled Pacific white frozen shrimp – 31-40 shrimp per bag
    • 1 – 5.3 oz package (150g) enoki mushrooms
    • 1 tbsp (15 mL) miso paste, red – mixed with a small amount of the hot broth
    • 6 cloves garlic, minced
    • 1 cup (250 mL) fresh cilantro, chopped and lightly packed into measuring cup
    • 1 bunch green onions, chopped into ½ inch (1 cm) pieces

    Method:
    Pour the broth into a large soup pot. Heat over medium heat. Add the lemongrass and let simmer, covered for 10 minutes.
    Add hot peppers, baby bok choy, soy sauce, fish sauce, and shrimp. Bring to the boil and then reduce to simmer, cook until shrimp are cooked, approx. 2-4 minutes.
    Add mushrooms, miso paste, and garlic, stirring well so the miso paste dissolves.
    Remove from heat.
    To serve; ladle 2 cups (500 mL) into a deep soup bowl. Top with cilantro and green onion.
    Makes approx. 10 cups (2.5 L)
    One serving = 2 cups (500 mL)

    Quick and Easy Mason Jar Salsa

    Hunt’s Diced Tomatoes and Rotel Tomatoes.
    This recipe is a real no brainer.
    If you have a quart sized mason jar that has a REGULAR mouth opening then you can throw all the ingredients into your jar and screw the bottom of your blender right to the jar.
    Seriously.


    Just throw a crushed garlic clove, a whole jalapeno, half of an onion (coarsely chopped), and the juice of a lime into the quart sized jar.

    Pull off a handful of cilantro and just throw it in the jar too.
    Open up the Hunt’s diced tomatoes and the Rotel tomatoes and pour them into the jar. Since it’s a regular mouth sized jar you might have to spoon them, so they don’t fall all over the place.
    Season with a little salt and cumin, then attach the blender blades and pulse away until smooth.

    This salsa is so good. It’s like the kind you get at a Mexican restaurant while you wait for your dinner to come out.

    1 large orange, peeled
    2 large apples, peeled
    1 8.5 ounce can crushed pineapple
    1 cup sugar
    Grind all fruit using a meat grinder or food processor. Add sugar. Additional sugar may be required, depending on how tart the cranberries are.

    How To Make Super Easy Homemade Bread…
    Step 1: Add sugar to water in a bowl and mix until dissolved.
    Step 2: Mix together flour, yeast, and salt in separate bowl.
    Step 3: Pour in water mixture to flour bowl and stir until you can’t anymore (it will thicken fast!).
    Step 4: Knead on a floured surface until a smooth dough is formed (about 5-7 minutes). *Add flour as necessary to keep it from sticking.
    Step 5: Roll into a tube shape and place in a buttered loaf pan.
    Step 6: Place pan in the oven at 170 degrees for about 30 minutes to allow it to rise (it should rise above the top of the pan in this time).
    Step 7: Raise the temperature of the oven to 350 degrees and bake for 30-40 minutes (until lightly browned, oven time will vary).
    Step 8: Remove from pan to a cooling rack, allow to cool for at least 30 minutes before slicing.
