Had 3 of my five grandkids for lunch today. We had chicken sandwiches for lunch with celery and cheez whiz, sliced tomatoes, leftover pizza slab, some Genoa salami and the rest of the bologna. what a combination, but they loved it.

My neighbour brought me some fresh potatoes and dill from her yard so I whipped up a big potato salad-perfect as it is supposed to be hot for a few days.

Ive been caving homemade chicken soup so i used a chicken drumstick and made the soup yesterday, Boiled the drumstick on low and took off all the meat from the drumstick (wasnt much), added chopped celery, chopped onion, chopped garlic, peppercorns and salt. And boiled some broad egg noodles to add separately to the soup.

Today I decided to cook beef wellington. It turned out for the first time crooked and unpresentable, but very tasty. Highly recommend. If you're interested, here's the recipe:
INGREDIENTS
1 beef tenderloin, 1 kg
700 g champignons
10 thin slices of dry-cured ham
450-500 g puff pastry without yeast
1 small egg
olive oil
salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Preheat oven to 200 ° C. Cut off all the films from the meat, salt on all sides and pepper. Fry the meat over high heat in olive oil on all sides until golden brown.
Step 2
Wipe the champignons with a napkin, chop finely, season with chopped thyme, fry in oil in the same pan to evaporate the liquid, 10 minutes. Season with salt and pepper.
Step 3
Roll out the dough into a layer in which you can wrap the whole piece of meat. Line your work surface with a large piece of plastic wrap, and overlap the ham pieces slightly to form a rectangle. Place the mushrooms on the ham. Lay the meat on top. Helping yourself with plastic wrap, wrap the meat with ham and mushrooms, tighten with plastic foil, place in the refrigerator for 1 hour.
Step 4
Remove the foil, transfer the meat in the ham to the dough, wrap and pinch the edges, cutting off the excess. Brush the dough with an egg, lightly cut on top, bake for 25 minutes. Rest 15 minutes before serving.Last edited by Leslie Simpson; Mon, Sep 7th, 2020 at 06:05 AM.

Yesterday while waiting for hubby to get home from operation (he had a volunteer driver) i made a small batch of cabbage rolls. So we are having some for lunch today.

I made some more homemade chicken soup, craving this for some reason. Used piece of chicken back, some chopped onion, celery, garlic, carrot and peppercorns. This time i boiled up some mini shells to add to the soup.
