Angela273, hope it isn't too late to give you a suggestion to use up your cottage cheese. This was always a favourite with our bed and breakfast guests.

Cottage Cheese Filled Crepes

Make a batch of crepes as follows:

1. Melt 2 TBS of butter or margarine
2. Add 1 1/4 cups flour, 1 1/2 cups milk, 1 egg and a pinch of salt
3. Beat until smooth
4. Let rest in fridge for 1 hour
5. Coat a 6 inch heated skillet with a little oil
6. Pour approx. 2 TBS at a bit, of batter in the bottom of the skillet
7. Swirl to coat the bottom of the skillet
8. When set, turn out onto a cooling rack to cool

NOTE: These crepes can be made ahead and even frozen for future use. (Makes 10-12 crepes)

Cottage Cheese Filling:

500 Grams cottage cheese2 Egg yolks
1/2 tsp Vanilla
1/4 Cup Sugar
1/4 tsp Cinnamon
1 Tbs Cornstarch
Pinch of Salt

1. Combine All ingredients
2. Microwave on high for 4 minutes, until thick
3. Fill crepes
4. Top with fruit sauce

Fruit Sauce Ingredients:

2 Cups fruit, divided (blueberries, strawberries, apples, peaches all work well)
1/2 cup water
6 Tbs sugar
1 Tbs cornstarch

1. Combine water, sugar, cornstarch and 1/2 cup fruit
2. Microwave on high for 4 minutes
3. Add the rest of the fruit

Worth mentioning - NF freebies in ONT. Huggies wipes are $2.00 and there is a coupon zone save $6.00 wub2 Huggies Diapers or wipes = free posted by another SC'er also another SC'er posted again NF has the Sunlight laundry bars on for $2.00 - $2.00 coupon zone = free AND I believe these are the ones that people use to make their own laundry detergent .

Managed to SCOP a large bottle of Jet Dry on my Sobeys run-free is always good! The sign said 9.99 with 25% off-so I figured okay a large bottle for 7.50 plus 15% off was not bad. But it rang in at 9.99 with no 25% off so I went to customer service-the lady said she would owe me 2.50 and I said I should get it for free! Then she deducted the 15% off the SCOP that I already received and she said 9.99 minus 15% so I owe you 7.75 back-I said no you owe me 8.50 back. So I ended up with it for free because I am not afraid to speak up for myself or challenge their math but I had to work for it!!

well baby shower is this Saturday for daughter-in-law cant wait -just getting stuff together now and wrapping -hopefully it goes off great

I feel slightly accomplished today. Sobeys had a special 15% day today so took full advantage d that. I was able to snag a cart worth a little under $100 for $16 and change. Which is great because my food budget for two weeks was $20. But I think I did fairly well. I have a surplus of tofu in the fridge so only really needed produce and a few condiments. The best part was no busses since my mother let me borrow her car. PHEW.

don't know if I ever mentioned it. but I use vinager instead of jet dry. We have extreamly hard water here. and with vinager I never have any spots.

Back to school means back to routines, right? Question of the Day???? Did you buy new wardrobes for your kids or just the odd pieces, school bags, lunch bags? Inquiring Minds Want to Know!!! Are you going to be foraging for apples (getting apples from along the road sides) or do you have your own trees or just purchase them in large quantities. What do you do with your apples (freeze, can, jellies, etc?

Question of the Day - my oldest was not in the mood to shop for new jeans so he wore his existing clothing, school bag and old lunch bag. I will need to purchase him a couple pairs of jeans and some new indoor shoes. My youngest (10) needed 3 new pairs of pants and will need a new pair of indoor shoes as well but besides that still using up the existing clothing as nothing was needed . I do forage for apples as our apple trees are not yet producing enough quantities. I will be canning the apples in medium syrup for later use in baking recipes or to eat just like that. I may make jelly but not really needing any this year but I may do it anyways and get ahead of the game.

no on the outfits, my guys reuse lunch pails ect. we do purchase what ever they have trashed. but .... no need to replace something just to replace something. they each get a new outfit. but its a 1 outfit, not a closet full.

If I could forge , I would. but there is nowhere here. I do have berry bushes here, so I use those.
I usally just buy apples when they go one sale.

Glad to know that I am not the only one besides Caseythegoalie who doesn't purchase all new items for their kids just because it's a new school year. What type of berry bushes do you have and what do you do with the berries?

No, while I do have a London drugs around thy don't carry food items.
On sobeys discount days I pull out some trusty fpc's and high values. That way I can make the "overage" and put that money towards other items. Usually produce, because that is my biggest cost. Especially without my stupid garden.
