I cooked the most perfect prime rib roast last night... my gf's hubby is a chef I learned from him to always cook prime rib slow on really low heat... it took 3 hours on 250 to bring it to a perfect medium rare... That was accompanied with mashed potatoes, gravy, yorkshire pudding, mixed veggies, cream corn (hubby's favorite with mashed potatoes), Cesar salad and a spinach salad with walnuts, strawberries, mandarin orange, pomegranate seeds, goat cheese and raspberry vinaigrette dressing.... apple pie (Farmer's market) and ice cream for dessert.... It all turned out really yummy!!

Zucchini Lasagna
Ingredients:
- 1 lb 93% lean ground beef or chicken or turkey
- 1 1/2 teaspoons kosher salt
- 1 tsp olive oil
- 1/2 large onion, chopped
- 3 cloves garlic, minced
- 1 (28 oz can) crushed tomatoes
- 2 tbsp chopped fresh basil
- black pepper, to taste
- 3 medium (8 ounces each) zucchini, sliced 1/8" thick
- 1 1/2 cups part-skim ricotta
- 1/4 cup Parmigiano Reggiano
- 1 large egg
- 16 oz (4 cups) shredded part-skim mozzarella cheese

Looks great H team
My neighbour will not be Roasting a lamb on the Backyard Grill again this year.
His father passed away last week, so the celebrations will be low key.
I have a boneless leg in the freezer I might just try it Sunday, unless your inviting me to your place?

Turkey carcass soup is cooling off, so I can skim it and then freeze it.
Just broth for now, I will make something at another time.
H your lamb recipe is resting in the fridge in all that lemon garlicky goodness!
I am also doing a small pork roast the same way for the picky ones.
Going to do loaded broccoli and wasabi mashed potatoes, maybe a red pepper and mushroom stir fry for some colour on the plate!
