Husband had leftover chicken, potatoes and carrots.
Our son and I had most of an Oriental Party Pack from M&M Meats - gosh, all items in it are so good.

lol Patty - checked the freezer and we only have one left. They are on sale this week for 8.99 so will have to pick up a couple more to use over Christmas.

I don't think I ever posted a pic of this family favourite of ours. I take 6 med-large skinless boneless chicken breasts and slice through the middle to open each up. I coat each breast well with my own home made crumb mixture. Then I lay 3 of them down on a greased baking pan, Place on top of each breast ( stuff very well) Stove Top Stuffing ( but I add dried cranberries and celery to it )
Then I place the remaining coated breasts over top of the stuffing. Pressing down firm.
Place a second greased baking pan over the top,press down slightly and bake at 350 degrees for about 20 min.
Then carefully flip the pan over so the top is now the bottom pan, and cook another say 20-25 min ( depends on how thick the breasts are )
When they are cooled down I slice them into portions.

I'm making a ham and Mom did scalloped potatoes (she lives with us). I really like them, but have no idea how she makes them! Need to pay more attention next time.
