OK. . . I was all over the place. I started with making corn chowder, than made bran muffins with molasses, dates and raisons. THEN I made these spinach cheese squares which turned out awesome!
So we had to go to a meeting. Got back at 10 pm and decided to boil up some Olivera proscuitto stuffed tortellini. Of course what would it be without sauteed garlic and green onions with butter, right?? . . .

..I went to Bingo last night with my aunt (didn't win..not even close..lol) I was in a rush to make dinner so I made goulash...and not just any goulash, I used KD Spirals!!...lol....I fried onions, garlic & mushrooms first and then added ground beef, added no salt added stewed tomatoes, spices, incl lots of basil..then threw in the spirals with a little water, let that cook and then mixed in the cheese mixture at the end..it was really good surprisingly

Not a clue, I am working out of town so will be getting home late, home is working latish and then wants to go out and we have no plans for dinner. Guess it will be whatever you eat kind of night.

My mom, not knowing I already had a chicken salad sandwich for lunch, made me a chicken salad wrap for supper. Oh well, it was still good.

On the way home from work, husband got takeout fish and chips - ah, SO good.
Unusual for us to have takeout twice in a week, but we'll be hunkering down to hibernate for the weekend, so it will all be homecooked comfort food for that!

I did shrimp in lemon butter with sauteed garlic and green onion over rice (which I grated lemon rind in while cooking) Hubby loved it but said he'd prefer twice as much. What an Oinker!!!
Couple hours after dinner he said he was hungry. I said, "ya. . .here. have some peanuts" I know. I'm mean. . .

Oh, YUM, I'd want more, too!
Yesterday when we bought chicken pieces, husband offered to make supper tonight.
But, how does it turn out that means he'll just make the chicken, lol! He's doing with them something which he hasn't done in a while - I call them being fried to death, but it's actually quite yummy. He fries the pieces lightly in oil, just with s+p, then keeps adding water and letting that steam down over a long time til the pieces are all very browned and so very tasty.
So to go with, I'm making mashed potatoes (the broth left from the chicken is yummy drizzled over), I'm steaming cauliflower for myself, raw cauli for husband, and I'll have some kernel corn as well.

Mashed potatoes, green beans and baked porkchops with sautéed mushrooms. And DH is MIA so supper is in the fridge.
