We were invited to friends place for dinner and she's Latina. He's just plain ol' caucasion. Was so Awesome!
He bbq'd ribs. Who doesn't love that? and she makes her own black bean from scratch with garlic, onion, spices. . .served over rice. That was delicious, but she also fried up yucca, which I've never had before. Was it ever good!!!
I am hooked on that. Totally buying some next grocery trip!
Anyone else out there cook with Yucca??

Chili made from ground pork tonight - what my son called kitchen-sink chili, because I put anything I can find into it; with pasta of some sort.

chicken wraps. we will cheat and use frozen breaded chicken strips, spring mixed salad package, tomato, cucumber and kraft peppercorn ranch dressing all wrapped in flour tortilla

Whole roasted chicken with mashed potatoes, green peas and homemade gravy, yummy and enough leftovers for dh's lunch for 2 days and enough chicken breast for 2 sandwiches - love those meals that really stretch the budget
2019 is the year that we continue to save before we buy!!!

made DH and the gang a large meatloaf ( at DH's request!! ) The man would never let me make one all our married life, claimed he HATED meatloaf, so I never did. Then just a week or two ago he asked me to make one, said he was willing to try since I kept telling him he eats all the freaking ingredients that meatloaf is made up of anyways. He LOVED it! I knew he would.
So I repeated that recipe today.
Also did a large bowl of smashed spuds for them and the whole bunch of fresh steamed broccoli.
My dinner was a bit fussier to make but I am good to go now. Made a pan good for 5 WW servings of Gluten free lasagna, this time using cooked chix breast instead of gr. beef Also made a new quinoa, roasted butternut squash, roasted red grapes, Goat's Cheese and fresh basil salad that serves all of us. Only costs me 3.5 Smartpoints for a 7 oz serving, so very do-able.

Last night we had Kale Salad with Chicken and some Oven Baked Fries.
Tonight is a total mystery, will look on Pinterest later to see if I can come up with something. Mom is working the 10 am to 6 pm shift which really messes with dinner as I cannot wait until she gets home to have dinner and she wants dinner when she gets home but nothing heavy since it will be after 7:30.
