Tonight's supper was bison roast, KD, boiled green & yellow string beans with baby carrots, and apple sauce. I baked apple crisp yesterday, so we might have more tonight with icecream.

Mom said she is going to be making a pasta dish using ricotta and spinach before work as she closing again today. So that will be my dinner when I get home.

Last night I had about 18 WW points left to use up. I pulled out the Magic Bullet and ground up 25 gr of Tostito chips to make bread crumbs ( lol ) then added a shake of all purpose spice ( the no salt, no msg kind ), tossed in some liquid egg white and my 9 oz of Alaskan Pollock fillets. Poof! instant fish patties.
They browned up so good in the pan too, added 1 oz grated mozz to the tops ( it made 3 fat patties ) could only eat 2. Had with steamed spinach, broccoli and sauteed red peppers. My dessert was from a WW recipe, Coconut cherry macaroons, ate 2. Still hadn't used up the points. oh well @Lynn49 you know what that is like right? Might be time for a Scotch! ha ha

Last night DH took me to see Phantom of the Opera so we had dinner at Figo Restaurant. I had the gnocchi and DH had lamb and we started with zuchinni fritta (zuchinni fries) it was all so very yum!
Tonight I am making lightly battered fish that I will bake, with roast potatoes and greek salad

I was thinking about making poutine tonight. I've never done this before. Oven baked fries, gravy from last night's bison roast, and mozzarella cheese. Have to figure out the rest of the meal. Dh has somewhere to be at 5:30, so I'll try to have supper ready to eat when he gets home.

I have some leftover rice & pork roast, so going to make a fried rice and add kale, etc...and making S&S chicken (thighs & chicken balls) and I have spring rolls to go with it..yummy for the tummy!!

^ if I don't lose power..high winds have knocked out the internet already..but the wood stove is chugging, I can pretty much cook anything on that now lol

,,forgot to mention that I also made a Betty Crocker Butter Pecan cake mix, used carnation milk and added vanilla pudding to the mix...and finished with a vanilla cream cheese icing..as fluffy as a cloud

Sauteed ground pork with onions and varied seasonings, added partially cooked peas, carrots, and corn, mixed in a can of cream of mushroom soup, put in oven to meld those flavours. Will serve over pasta.
