    Yesterday i was craving potato pancakes, so hubby shredded 6 potatoes and thats what we had. With sour cream or cheese for hubby.

    Potato Pancakes

    6-7 potatoes (more if you want more pancakes) (shredded)
    1 medium to large onion (shredded)
    1 egg
    a bit of flour to thicken
    salt and pepper to taste

    Fry with a bit of oil in frying pan or on a griddle sprayed with Pam. You can eat the potato pancakes with sour cream, or cheese or like mom used to do, with milk.
