Next time i make cabbage rolls, whether boiling on the stove or in the crock pot, i will take a picture and post it here. The crock pot is the easiest; set it on high for 4 hours and its done. Less of a mess also. i like the old fashioned way, boiling on stove, but you have to watch it so the bottom of pot doesnt burn. you have to add juice all the time. thats how my mom used to do it.

This morning i made the dough and filling for some other kind of Ukrainian cookies called Palchickey (Finger shaped cookies). And tomorrow my daughter, son-in-law and son are coming over to make them. Making the cookies is time consuming; You have to roll out the dough and then cut in strips and then cut again in 1 1/2 squares, fill with a bit of walnut filling and then pinch together. Brush with egg wash and sprinkles, bake and then toss them in sugar . Long process and my fingers arent what they used to be. Hence the help! Will post pictures and recipe later.

Made a Carrot Apple Loaf to use up some of my overflow of carrots
Then I went downstairs to pull the rest of Frozen Croissants I bought from Costco (Sound like a good idea at the time but FYI these take a TON of freezer space and I want my freezer space back). These have been baked off and will be turned into Triple Berry Croissant Bake, this is supposed to be a Breakfast but it is extremely rich (has a whole brick of Cream Cheese in it) so instead we have it for dessert with a little Whipped Cream.
Well I was moving stuff around in my freezer this one bag of frozen Bananas were annoying me so out they came and have been turned into Banana Muffins
Now lastly Cornbread is in the Oven to go with the Turkey Sweet Potato Chilli I have going in the Slow Cooker2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

The first picture is of Palchikey (finger cookies). We made approximately 300 hundred of them. Both my daughter, her huband and our son helped make them. they each took about 100 of these cookies home. They are about the size of a pinky finger to the knuckle. The second picture is of pompochkey (rum ball cookies). Recipes will follow.

Time consuming is right, but it was lovely to hear how everyone pitched in to make those finger cookies up.
I was convinced the 2nd photo was chocolate chip cookies....looks delicious!

Here is the recipe for Pompochkey (Rum balls). This recipe is sooooo old that i dont even remember when my mom started making them.
Pompochkey (rum Balls)
4 eggs
1/2 cup sugar
1 cup margarine (melted)
2 tsps rum extrace
1 cup raisins
1 cup chocolate chips
1 cup walnuts, chopped
2 cups dates, chopped
1 tsp cinnamon
3 cups flour
1 tsp baking soda
1 tsp baking powder
Mix all ingredients. Roll dough into small balls (about 1 inch but no more). Place on ungreased cookie sheet and bake at 350F for 12-15 minutes (i bake mine for 10 minutes), or until golden brown.

This recipe for Palchikey (Finger Cookies) came from my mom's friend in Toronto many years ago. Time consuming to make but well worth it.
Palchikey (finger cookies)
1/2 lb Crisco (1/2 a brick)
1/2 lb butter (1/2 a brick)
Both softened, not melted
4 egg yolks, mix well
1 small carton sour cream (about 1 cup)
1 shot glass of vodka (dont know why but it adds to the taste)
5 cups flour
yeast: 1 tbsp warm water, 1 pkg dry yeast, 1 tsp sugar. When yeast is ready add to rest of mixture and mix well.
Mix all the ingredients and make dough. Knead 2 times and refrigerate overnight.
Filling:
1/2 lb finely grated walnuts (approximately 2 cups, maybe more)
some cinnamon (i used 1/2 tsp)
2 egg whites, beaten
1/4 cup white sugar
Mix well together and refrigerate overnight
To make cookies: Take small pieces of dough and roll out sprinkling with sugar
Assembly:
Cut dough into tiny strips (about 1 inch). Fill with walnut filling (do not overfill) and wrap. Pinch tops. Brush with well beaten egg whites and sprinkle with decorations. Bake at 350F for 20 minutes. Remove from pan and sprinkle generously with granulated sugar.

The last thing I was baked was last week - milk and white chocolate chip cookies from scratch. They lasted only 2 days because I ate them all
