Tonight I am going to try a new recipe for Spinach & Ricotta baked pasta. It looks like a casserole version of Spinach & Ricotta stuffed shells which would be nice change for a quick work night meal vs the time it takes to make stuffed shells.
Normally I make the recipe once exactly how written the first time I make it. But I do think for this recipe I am going to tweak it a little bit as the original recipe is very simple (not always a bad thing) but one thing I have learned when working with Ricotta is herbs and seasonings go a long way. Pasta here too!! Rotini pasta with tomato sauce, extra tomatoes, ground beef, mushrooms, onion, garlic, spices etc & garlic cheese bread..lots leftover for tomorrow!

I have a crock pot of chili cooking now. So thats for supper tonight.
Easy Chili Recipe
1 lb minced beef
1 onion, chopped
2 garlic cloves, minced
796ml chopped tomatoes
376ml medium salsa
1 10 oz can niblets corn, drained and rinsed
540ml kidney beans, drained and rinsed
375ml tomato sauce
1 tsp cumin and coriander
2 green onions, chopped
salt and pepper to taste
Brown meat, draining liquid when done. Add onion and garlic; frying until onion is transparent. Add rest of ingredients into crock pot. Cook on low for 6-8 hours. Enjoy!
