Good thing I have the 1st box of rapid test kits as DS2 was exposed in one of his classes so that kills Christmas. He is to isolate for 10 days and still needs a PCR. His 1st rapid tests were negative so hopefully this is the outcome. I booked a PCR for Tuesday in the hopes we know by Christmas Day and another for Boxing Day as he needs a clear PCR to end his isolation. There needs to be a faster system for appointments and results. It took me hours to find an appointment and even then I expect we may not have the result before Christmas dinner. There is no way I am making my son that lives with me spend his Christmas Day and most of his vacation in his room. So we cancelled all plans and he will rapid test every day until we get the PCR results. DH and I got our boosters yesterday and once again I had a reaction but I know that’s a good thing, we got Pfizer so now I have one of each.

I am feeling for the Ontario residents who got two different vaccines and cannot get in for dose 3 despite being eligible age-wise and 6monthwise. Seems to be a continuing issue on top of "where in Ontario can I find an appt?"
One large GTA mall sent an e-mail about the 50% capacity limit and colour ranges related to capacity. If you remember the capacity gauges on mall sites in summer 2020, they are BACK! Especially if families or adults might be trying to access mall-based vaccine clinics, plan for the weather and the time to wait outside (and slip a hot pocket pack into a coat pocket if it helps).

Decided on Sat night to clear walkways and scrape off some ice on car.

Was watching The National (CBC) and the doctor raised a good point about event testing. He said that someone might test negative in the morning but that their levels might rise later and thus yield a positive test in the evening. He suggested that it would be best to test as near the time of an event as possible.

Lilo-that is a real bummer about your son. I hope he continues to test negative and his isolation will be short.

This is turning into a very unpleasant Christmas time. I echo the sentiments above^^^ @lilo0003 .
Hopefully he does get that negative result and will be joining you all at the dinner table on the 25th.
    (((hugs )))

    Good Morning Everyone,
Yesterday was only the second day of shut down but I am already losing track of what day it is. I forgot to take out garbage out last night but I thought it is okay they haven't been coming until sometimes between 9 - 11 am lately so I will take it out in the morning before they come. They came at 6:05 this morning, I was just getting out of bed.

Cranberries are soaking, they need to soak for 8 hours so after dinner I will roll them in the sugar, let them dry and pack them up.

The Chickpeas are in the Instant Pot, waiting for the pressure to release. Once done I will lay them out to cool and once they are cool I can soak them. The Chickpeas are going to take some time to make but it is mostly wait time. I soaked them overnight, put them in the Instant Pot, then I need to cool then, then soak them for at least an hour, drain them, let them sit for at least 30 minutes and then bake them. Biggest thing is remember what one step is done and I can moved to the next.

I am thinking next I will make the Christmas Eve Savour Snack mix, truth be told this is for me, I love these types of snack mixes and this includes Balsamic Vinegar which I am a sucker for. So I added this to take home gifts because it makes 16 cups.

Then I will move into cookies.

Feeling good about today that I can get everything but the plated desserts done.

    Happy Monday Everyone

He is not leaving the house so its more for our piece of mind. Until this new variant those that had been in close contact but were double vaccinated did not have to isolate. The rules are changing daily and not for the better. We booked the booster shots for the kids and the best we could get was mid February, but we took them because that's still better than nothing and if we can move them up we will.

Cranberries are still soaking, these need to soak until after dinner.

Chickpeas are not going as planned, I let them soak in the pickle juice, as per the recipe laid them out on a cookie sheet to sit for 30 minutes to dry off before roasted, they did not dry off. It was almost as if the pickle juice was coming out of the Chickpeas, they were sitting in liquid. I have now moved them to a cookie sheet lined with paper towel. Finger-crossed this works as I do not want to come up with a plan B (but with that being said I do have one, if this does not work I will make Salt & Vinegar Almonds).

Christmas Eve Savoury Mix is done, OH MY it is so good, I would eat the whole thing myself but I will portion it out as gifts.

Cookies are not going well, the ones that were going to be my vegan option, I knew they needed to refrigerated but I thought it was the dough. Nope, not the dough you need to roll them out then refrigerate, the recipe makes 50 cookie balls and I have no idea how I would get that many cookies in the my fridge.

Then I went to make the Ricotta cookies and the blogger added a not last week. The original recipe called for Almond Flour but the blogger added a note last week, a number of people have reported the cookies did not turn out, they now recommend using Ground Almonds vs Almond Flour. I checked I do not have ground almonds. I guess I could make my own in the food processor but that feels like a lot of work.

I had been planning to drop the Forgotten Cookies because I have made them before but now I am thinking, they are so easy and I know they work that I might make those before bed. Because you turn the oven off and leave them in the oven overnight.

A little set back today but still feel I have get back on track just need to regroup and reorganize.
