Originally I had a Chicken Stir Fry on my Meal Plan but we weren't feeling the Chicken today so decided to make Beef & Broccoli instead. Will serve it over Rice, plus we have a few Spring Rolls & Dumplings left from New Years we will heat up and serve on the side.

I want confirmation from people who do math ( well arithmetic basically). After making up the 75 raviolis I was curious how much they had cost me. Just like the mechanics that work on our vehicle the labour is what costs. The ingredients I used are below.
300 grams of Tipo double zero flour @ $1.05
100 grams of Semolina flour @ .35
4 eggs @ .66
ground pork ( used part of pack) @ $4.25
Total Cost $6.31
Unbelievable that a single one of these is only 8 and a 1/2 cents. I suppose if we add in some sauce and Parmesan to top these it would round it up to nearly 10 cents each!
Pasta sure seems like a deal on the pocketbook.

Hi @Purdee been there, done that! I used to think these fresh pasta ready made filled pasta shapes were all the rage. Olivieri, Ziggy's and others. As you said sometimes they can be heavy on the pasta, light on what's inside.
I am not sure if you can call this a recipe, as I just wanted to try and use up a small tray of ground pork. I placed the meat in my food processor, along with lots of minced onion, garlic, dill weed, a dry spice blend similar to Italian Seasoning, and red pepper flakes for a bit of heat, small amounts of S & P.
I cooked the mixture till no pink colour remained in a pan with EVOO to be safe. Placing raw pork into the dough....I didn't think the boiling process would cook it enough?
The dough I made ( pretty simple in the food processor again ) 300 grams Tipo double Zero flour ( found at Metro ) , 100 grams Semolina flour and 4 eggs...that's it!
I thread the dough through my metal pasta machine, the kind you crank by hand and change the settings till you get it thin enough. I never go past 6 for ravioli.
Then place a small blob onto the dough and either place an entire new sheet over the meat bundles and cut between the spaces OR do what I did ( NOT! ) and waste so much time making some single ones. lol
If you don't want to make the dough, you can always buy the lasagna fresh sheets of pasta and par boil them just a bit to soften them , then fill the same way, sealing all 4 sides ( the edges ) by pressing down till they stick.
I then like to put them all on a large tray and freeze them solid so they can be bagged with no chance of the edges sticking to each other.
Of course you have to leave some out to boil up and taste test them.....lol.
I like the handiness of reaching into the bag of frozen bundles for whatever number of servings I need to boil up and sauce.
Hope this helps.Last edited by walkonby; Wed, Jan 5th, 2022 at 11:50 PM.

Thanks!! I don't have a pasta machine but I like the idea of using lasagna sheets. If it does not work out I'll turn it into "deconstructed" pastas with meat sauce hahaha

Christmas is officially over! Old Christmas Day (Jan 6th) we usually celebrate with a large festive meal and big night party to end the holiday season. But no parties this year (due to covid) and I just didn't feel like cooking a big meal yesterday so delayed it for today! lol Instead of turkey cooking a beef roast with all the trimmings

When discussing what we should have for dinner, I got a "are you sick of pizza." Nope I had it on the meal plan for this week already. I find making homemade pizza every 2 to 3 weeks reduces the temptation to order for delivery.
Homemade Pizza with Pepperoni, Onions, Mushrooms, Bacon, Cheddar and Parm.
Normally I would make a salad on the side but we are out of lettuce and not willing to pay $3.98 for 2 heads.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Last night I thawed an almost 2 kg pack of ground beef, divided it into thirds. One third became stuffed bell peppers, the 2nd became cabbage rolls and the last third will become chili ( the beans still have to finish soaking. )
The guys dove into the peppers and cabbage rolls in the wee hours and I'm kind of surprised they thought the filling for both of these was the same?
Well, yes the browned meat, onions and cooked rice are, but the herbs and seasonings are so different. The peppers had mainly an Italian seasoning in it and Panko crumbs and grated Parm on the top to bake while the rolls were a more subtle mixture with dill weed, tarragon and smoked paprika in the mix.
I even used 2 different kinds of red Classico sauce on these. Both had passata in the bottom of their cooking pans.
Pffft! my guys never seemed to notice the difference, that can happen when you inhale your food. ( sigh )
