Last week dinenr seemed like a chore, back to the "What do you mean I have to make Dinner again, didn't I make it last night?"
This week, we are getting back on track, I am making Beef Stroganoff over Egg Noodles with a side of Broccoli.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Tonight we made Homemade Chicken Tenders with Oven Fries and I had a Caesar Salad on the side because I am obsessed with the combination of Caesar Dressing and BBQ Sauce which we dipped our Tenders into.

Steak wasn't thawed so we made crockpot sweet potato turkey chili (we used Clubhouse Chili mix...our fav)
Rice Krispie squares for dessert...we made them with the regular recipe along with a touch of honey thanks to a tip from a friend.3.50 125.00 30.00

Today was a busy day between work and catching up on housework I did not get done over the weekend some wanted something kind of easy.
Making Pierogi Bake with Broccoli. Outside of making the sauce and having to grate the cheese (my own fault for not getting my prep done) all the work is done in the oven.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

I was in a haze on pain pills all day Monday. Total immobility once again, bedridden. This time it was the right ankle, locked, swollen and throbbing, so I'm beyond fed up. My routine is the same, I'm terrified to eat or drink anything as that can result in a need to reach the bathroom. ( which is a very slow dance ) DH was forced to miss work to do all the stuff I usually do for Frankie and the cats. About a half hour ago I was able to reach the living room, via the stairs on my bum....lol.
Dinner? I have no idea what the guys ate, I'm eating pasta atm.

feeling " chipper " compared to the last 2 days, so I made up a whack of dry oven roasted pork ribs. The guys will snack on them instead of having as a work meal. Fine by me.

I am beyond tired today and do not know why so keeping it simple with Meat Sauce over Pasta with Cheesy Garlic Naan. No Salad had a huge Salad for lunch.

DS brought me home a container of chicken Shawarma! I've never tried it before. My gosh the take out serving could feed 4 people! It was over a bed of rice.
Aesthetically it does look like a dog's breakfast, but the flavour is awesome! He got the " mild " sauce on his and asked them to just drizzle one corner of mine
with some of it so I could taste the heat. It was tasty not just hot. There was a creamy garlicy sauce on the whole thing anyways.
Wow....I'll be having the other 3/4 of it sometime over lunch and dinner today.
I asked why DH didn't have any and he cracked up saying.... " I ain't eatin that stuff! " . Curious eh? The guy eats nearly anything but draws the line at this.
His loss imho.

Sometimes it is a windy road to get to dinner.
Originally I was thinking either Homemade Pizza or Chicken Parm.
Then Mom suggested let's keep simple with something like a Steak and Baked Potato, wasn't feeling the Steak so I thought maybe BBQ Chicken with Baked Potato.
Then it hit me, let's make my Sheet Pan Garlic Butter Chicken, Potatoes & Green Beans (the Green Beans are because they were on top when I opened the freezer, you can use Green Beans, Brussel Sprouts or Broccoli).2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

We're all set for our Super Bowl menu. Hoping to lay everything out around 7:00 p.m. and we'll sort of graze the night away.
We are having herb coated chx wings which I'll air fry, 1/2 box oven cooked Janes Chx strips, homemade potato salad, homemade
Alfredo seafood fettucine ( with lobster, crab and shrimp ), homemade broccoli/bacon/raisin/with mayo salad, heirloom and baby
carrots with Caesar dip and store bought key Lime pie.
Number of alcoholic drinks consumed will be determined by the score at each quarter!

Going to use leftover oven roasted pork for a yakitori fried rice. I sampled the chicken yakitori fried rice at Costco over the weekend and I like the flavour so I looked up a simple recipe for the yakitori sauce and going to make fried rice later. I have made fried rice many times and have our own seasonings and am hoping to add this yakitori to our recipes - it's nice to switch things up once in awhile.
