Last night I was a volunteer bartender at the Andrew Allan concert and the performing Center treated us to a beautiful charcuterie board as we were setting up the bar. The concert was so good.
today I made a pot of beef vegetable soup so that is dinner.
Left overs tonight..pork roast and stir fry and Diet Pepsi
Last night we were home late from DS's hockey game so we had homemade mac and cheese that I made in the morning. (well his Aunt took him to a Wing house for an early dinner around 3:30 so the mac was his 2nd dinner :) )
Tonight- Not sure yet. Simple night so see what I'm craving tonight.
I have mushrooms that need to be used today so I’m making pork chops in mushroom gravy, mashed potatoes and steamed green beans.
Leftover casserole, not enough rice left, so will have some chow mein noodles to go with.
This is not something I can eat atm, BUT I cooked up 2 of them for the family and they said they were so very tasty!
FreshCo had them marked down to just $6.00 each on the weekend. I froze one to add to the Christmas table, we can never have too many meat options there! ha ha

I have no idea. Dh plays pickleball from 5-7 and I’m busy here at home tonight so we may just snack on cheese, antipasto, oysters and crackers.

i bought a family sized Cesar salad from rcss for dinner; it's nice to have some veggies after all the meat we had for the last 3 weeks while on vacay
roasted red pepper soup, Caesar salad and 5 stuffed then broiled nice and brown mushroom caps.
Last night we have Pizza Stuffed Portobellos with Kale Salad. Toppings in the Mushrooms were Mozzarella, Parm, Bacon, Pepperoni & Onion.
Tonight I am thinking of a leftover night, I was looking in our fridge last night and we have a lot of leftovers, more than we need for lunches this week.
On Monday I roasted a nice picnics ham, diced potatoes and onions in a separate pan, fresh sugar snap peas, and canned pineapple.
Tyesday: leftover ham, leftover potatoes and onion, pineapple, steamed broccoli/cauliflower/carrots.

We are going to fire up the Weber and grill homemade burgers tonight. A Caesar salad and grilled zucchini to add some crunch.
Clam chowder
Deli roasted chicken, had homemade stuffing, corn off the cob, macaroni and potato salads.
..have chicken legs & asparagus on the menu so far but not sure what I'm making...maybe baked potato too if I bake the chicken
first time since late Oct. that I haven't done a very large lettuce, spring mix and spinach salad for a meal.
I decided instead to make egg salad since on Phase 2 of my eating plan I can have REAL eggs ( yes WITH the yolk!) within reason.
Boiled up 2, squeezed the masher down to get the desired egg bits....added plenty of fine diced celery to increase the volume, some black pepper and sparingly added my diet mayo a Tblsp at a time.
Spooned half the mixture onto medium sized flat pieces of red bell pepper and onto some triangles of a raw wrap...had my broiled stuffed mushroom caps along with. Mmmm, what a treat!
I'll have the other half of my egg salad today at lunch maybe.
..I think today will be a homemade pizza & wing evening, I might also make my bacon cheeseburger dip for later
Last night I made 3 Cheese Pasta in Garlic Tomato Sauce and added some mushrooms that needed to be used up. I was trying to clean out my fridge a little bit which is over flowing so I got the part can of Pasta Sauce, the Container of Grated Mozzarella and the open packages of mushrooms out.
Our son unexpectedly came over and that changed our plans for leftovers, so we got the Ukrainian special at a local diner since it was Thursday - borscht, perogies with tons of bacon and onions, garlic sausage, and chicken Kiev.
So tonight will be leftovers supper - the rest of the roasted chicken, potato salad, and whatever else is hiding in the fridge. I don't think there are veggies, so I will make a salad for myself.
It’s been busy so not much time to cook, good thing I get fed wherever I go lately❣️ I’m putting on a pot of chicken noodle soup before we go to play bridge this afternoon, will be ready when we get home and putting in the fridge for quick weekend meals. Tonight we are going out for fish and chips to my favourite place in town, a little Asian fusion place that makes the best with red snapper... so yummy.
Tomorrow we are going to pick up our side of beef at the butchers and have a few errands to run, then a Christmas party. I love how busy it is in December, but then sit around in January waiting for the phone to ring!
