We did not make our Easter Dinner yesterday so we are going to have it today, we are having Roasted Chicken with Potato Stuffing, Mashed Potatoes, Gravy and a Veggie
Strange enough I had energy after my craziest day in months to make dinner.
We had browned impossible meat with green onions and a lemon peri peri sauce served over jasmine rice and broccoli. Sooooo yummy.
Ham linguine salad and tripe berry fruits and granola with vanilla yogurt parfait. was this kind of night...not in the mood
we've been getting wet flurries here and there for the past few days, the temperature has also dropped so it's time for a soup. Got the frozen beef cubes down, some frozen vegs and potatoes. Beef is stewing on the stove.
Easy leftovers. Need to empty the fridge as much as I can before we leave. Plus it’s easy lol
Decided on Mozzarella Chicken with Pasta tonight.
I got on a roll with work and lost track of time and needed something kind of easy but also wanted something different. We had this a week or two ago and we love it. It is a nice lighter dish, reminds me of spring.
You bake the Chicken on a bed of Onions, Garlic & Chopped Tomatoes and just before it is done you top with mozzarella. We will serve it over a bed of Pasta, YUM!!!!!!
i'll be picking up some food from a local restaurant called Osmow's; it's Mediterranean and they have Shawarma on rice, fries or salads.
it's warm and sunny out so steak on the barbie and potato salad.
For tonight’s supper I cooked roast beef, gravy, noodles, steamed California veggies.
I prepped snacks for lunches - breakfast cookies, carrot muffins, banana bread.
Over the weekend I made up a colourful beef/veggie stir fry for the guys ( I'm not eating any of this one because of certain high calorie items ), but they certainly loved it!
Then they got busy making their own batch of bacon wrapped jumbo shrimp, so I added to that Appetizer menu since the oven was on high.
I stuffed 12 mushroom caps with a mixture ( crab meat, Panko crumbs, fresh grated Parmesan, herb cream cheese, bit of mayo, diced green onions and oregano. ) , baked, then broiled the tops!
Lucky buggers they are!

Trying to get back on track, we have not turned to take-out but our dinner are meh, quick, meals we do not mind here or there but they have been the norm in our house for a bit.
Tonight we are having BBQ Chicken Caesar Wraps with Roasted Potatoes
I have been craving Beef Stroganoff but it has felt like too much work, tonight we make Beef Stroganoff over Egg Noodles and I am thinking Broccoli and Salad on the side.
Tonight was an Indian/Mexican fusion. I made Mexican rice and beans with charred corn and since I didn’t have any wraps I used naan bread leftover from last night’s pizzas.
Last night I made naan pizzas with sweet potato and spicy gardein breakfast sausages and fresh spinach. All plant based and used odds and ends from the fridge/freezer on short notice.
8th bbq of the season. Grilled sausages with grilled red peppers, poblano peppers, and cubanelle peppers. Raw cabbage and a tasty very hot horseradish sour cream sauce. Corn tortillas wrapped them all up. Delicious.
I wanted to go vegetarian tonight, feels like it has been awhile since we had a vegetarian night so we are having Spinach & Ricotta Pasta Bake
Ribs, baked potatoes, green beans and apple pie made by the hubs-we have company all week and I am feeling under the weather. So simple and good are my mantra.

Gave Mom two options, she choose Pork Chops with Packet Potatoes and a Veggie.
Not sure on what Veggie yet, will dig through the freezer and see what looks good as we do not have any fresh we need to use up.
@SassyAshley nice that you gave your Mom a dinner option. On Sunday I offered 2 things to the guys that I could make up for the week for them
( I'm STILL dieting so this is only for them ) ...I said lasagna or Shepherd's Pie and they said YES, meaning they wanted both...ha ha
One family pack of ground beef divided into two, a block of grated Mozzarella, various diced veg, spices, pasta sauce, gravy and noodles and they got their wish!

I made a bolognese with cremini and white mushrooms, lentils and a bit of gardein ground round I had in the freezer. Tossed in some shell pasta ( cooks the quickest) and it’s delicious, especially on a rainy night like tonight. Lots of leftovers for Dh for lunch tomorrow too.
Nearing the end of my stuffed red peppers, made with the konjac rice substitute. Feeling like Wednesdays dinner will include one of them and maybe some cooked cod.
BLSL chicken breast in the cast iron pan with coconut oil and spices. Fresh broccoli (free thanks to No Frills) and some roasted vegetables from the freezer that need to be used up (bits of open bags)
i got a family pack of ground pork on discount yesterday and divided it into 3 portions: made wonton soup last night, tonight will be spring rolls and i usually leave the 3rd for hubby to make his sausage or gravy and biscuits.
tonight's dinner: spring rolls and toss noodles (rice noodles, egg noodles, chive, carrots, vietnamese sausage and seasoning)
I was going to make a Taco Bake with a side Salad but, I am getting a headache and just want something easy so instead Nachos with melted Cheddar, Homemade Taco Meat from the freezer and toppings of choice.
